Date Question-Please help, I'm going in circles here!

I look at these boards many times a day so I'm feeling so excited for our trip, and prepared...but I cannot wrap my brain about what dates I should go really. We are planning a three week trip up the Coast of CA. Let me just lay out the logistics. We fly in to San Diego on 5/27. Originally this was the plan:
5/31-Drive to Anaheim
6/1-DCA
6/2-DL (Magic Morning and Minnie's Breakfast) (Grad Nite-we aren't participating)
6/3-DL (Grad Nite-we aren't participating)
6/4 Head to Pismo Beach
But then I started thinking that we should not rush it, and go leisurely so this is the alternate plan:
5/29-Drive to Anaheim
5/30-DL (It's a Magic Morning but we would try to get an early reservation at Plaza Inn and save our Magic Morning) (Grad Nite-we aren't participating)
5/31-Relax
6/1-Relax (I've read it is crazy on Mondays?)
6/2-DL (Magic Morning) (Grad Nite-we aren't participating)
6/3-DCA (Grad Nite-we aren't participating)-But should we do this since it will close early?
Any guidance is appreciated!

With the grad nights in there and longer hours, have you considered buying Hopper Tickets.
Hoppers will give you more flexibility of enjoying the parks.

I like doing a Character Breakfast first thing on a MM when I do not have the opportunity of MM.
Otherwise we like to go in to the parks and ride a few attractions for about 1.5hrs, then go to a late CB

That's a good idea. I wonder why I hadn't thought about that. I've already purchased our tickets thought Undercover Tourist. I guess I could contact them to see about upgrading...

You can always upgrade once you are at Disneyland.

Will you be purchasing MP? (UT lets you prepurchase this with your tickets.) If so, you can start booking FPs as soon as you activate your tickets at the gate (even though return times will be after park opening). So you could get an early start using MP on your MM day and on your Minnie & Friends breakfast day. And I agree with the suggestion to get hoppers.
