Cupcake question

Pssst! Spray the cupcake liners with PAM (or whatever spray oil you use) and the cupcakes (and muffins) come out of the liners without being crumbly or leaving half of the cupcake in the liner. :woohoo:
 
Do you have the kind of cupcake liners with foil ones and paper ones over there? I was always under the impression that if you used the foil/paper liner combination then you could do them without a cupcake pan. I have never tried it though.

Anyone know if this is correct about the foil liners?


I've seen reusable silicone liners. I'm pretty sure you just put those on a cookie sheet.

OK, so yesterday evening, I made my cupcakes, 12 vanilla ones and 12 chocolate ones. Since it's for a charity at the client's company (so i'm not even involved), I am not goin all out of the way to make the most impressive cupcakes, the basic stuff will just do fine, so no cones or anything.
I did put some icing on (after all, since I go to bakery school, I do have professional equipment for that!)

What kind of confused me, is that they came out of the oven looking like muffins. I had hoped that they would have a flat top (which would be easier to put the icing on).
Oh well, they look nice enough.

I took pictures, just have to upload them.
 
all my cupcakes come out looking like muffins. I have never seen them come out wiht a flat top. maybe I just overfill?
 

The tops stay flatter if you don't fill the cups so full, but then you have much smaller cupcakes. If I fill them about half full I get a fairly flat cupcake that just about reaches the top of the cupcake liner. If I full any further than that I get a rounded muff-ish cupcake but then it's also a larger serving. I usually make the larger ones because then I need to make less. I also find that chocolate puffs up more than white.

Just happend upon this thead. Cupcakes are the newest rage! We have tons of stores in NE and I am guessing around the conuntry that sell only cupcakes. Luckily I live near a Stonewall Kitchens Outlet(specialty foods priced to send you to the poor house). They have both cake and frosting MIX that is JUST like homemade. I made mini cupcakes the other day and even my mom who hates everything I make LOVED them. You can get Stonewall Kitchens at William Sonoma but it is 4.00 per box for the frosting. IF however you are in a lazy mood I totally suggest it. Also if you want to just make up a batch of frosting to eat(yes I have been known to do that but I do not eat it all at once) it is good to have on hand.

Would work if I didn't have to spend half a day in the air before I would be able to shop in the US :)

I'm in Belgium, therefor it's not always easy to make American things, we don't always have the same ingredients for sale.
