Culinary Demos - Jason Wilson- need recipe

Anyone get into the Jason Wilson demo and get the recipe? Wednesday, 12: 15 PM. We were too late to get into the demo, the DVD sold out, aarrgghh! He demo'd a steak with onions and Blue Cheese spoonbread that I would dearly love the recipe for. If anyone got it, can you post it, PM me, or scan it in and send it? I'd SO appreciate it.

I went to the demo, and have the recipe. When I find it, I'll post it. I know I have it around somewhere, I just don't know where, I was looking for it yesterday, but who knows where it is. I had all of the recipes from all of the demos we went to stuck somewhere, and now I can't find any of them.

I know this is from a long time ago, but I was going through some papers today, and found the recipe. I'll post it if anyone is interested?
 
Roasted Flat Iron Steak Serves 4

4 5-ounce portions of flat iron steak
Salt and Pepper, as needed
16 ounces Veal Stock
2 ounces Sherry Vinegar
2 strips Bacon, diced

Preheat oven to 400 degrees. Marinate (rub) steak in salt and pepper and sear on both sides in a stainless or cast iron pan. Place steak in oven for 40 minutes, cool for 2 minutes, then slice each steak into thin pieces.

In a medium size sauce pan sweat the diced bacon over medium heat until crisp. Add vinegar and stock, and reduce by 2/3, set aside and reserve as steak sauce.
