Cucumber Recipes?

I seem to have a bumper crop of cucumbers this year! But, we are getting tired of eating them! :rotfl: And, I don't can so I guess pickles are out of the question! Anyone have any good cucumber recipes to share? :jumping1: Thanks!

Cucumber appetizers :flower:


INGREDIENTS: :flower:
1 (8 ounce) package cream cheese, softened
1 (.7 ounce) package dry Italian-style salad dressing mix
1/2 cup mayonnaise
1 French baguette, cut into 1/2 inch thick circles
1 cucumber, sliced
2 teaspoons dried dill weed

DIRECTIONS:
In a medium bowl, mix together cream cheese, dressing mix and mayonnaise.
Spread a thin layer of the cream cheese mixture on a slice of bread, and top with a slice of cucumber. Sprinkle with dill. Repeat with remaining ingredients




Spaghetti salad :flower:
1 pound spaghetti
1 (16 ounce) bottle Italian-style salad dressing
1 tablespoon Italian seasoning
8 ounces shredded Cheddar cheese
2 tomatoes, chopped
1 green bell pepper, chopped
1/2 onion, chopped
1 cucumber, peeled and chopped

DIRECTIONS:
Cook spaghetti in boiling salted water until al dente. Rinse in cool water, drain.
In a large bowl place chopped tomatoes, green bell pepper, onion and cucumber. Add Cheddar cheese, and salad seasoning.
Add cooled pasta to large bowl with vegetables and pour salad dressing over top. Toss well to coat. Chill for several hours before serving.




Rice Asparagus and cucumber salad :flower:

INGREDIENTS:
1 3/4 cups water
1 cup long-grain white rice
1 pound thin asparagus spears, trimmed and cut into 1 inch
1 1/2 cups English cucumber - peeled, seeded and chopped
3 green onions, chopped
2 tablespoons Dijon mustard
1 tablespoon white sugar
1 tablespoon white wine vinegar
1/2 teaspoon dry mustard
2 1/2 tablespoons vegetable oil
1/4 cup chopped fresh dill weed
4 heads butter lettuce

DIRECTIONS:
In a medium saucepan, bring 1 3/4 cups water to boil. Add rice; return to boil. Reduce heat to low, cover and cook until water is absorbed and rice is tender, about 20 minutes. Fluff with fork; transfer to bowl. Cool to room temperature.
Cook asparagus in a large saucepan of boiling salted water until tender, about 1 minute. Drain and rinse with cold water to cool. Cut the asparagus into 1-inch pieces. Add asparagus, cucumber and green onions to rice.
Whisk together the mustard, sugar, vinegar, dry mustard, oil and chopped dill. Cover salad and dressing separately. Refrigerate until chilled.
Pour dressing into salad and season with salt and pepper. Line large bowl with lettuce and mound salad in bowl. Garnish with dill sprigs.
 
My favorite (and one we've had 50 times this summer due to our crop) is cucumber-tomato salad. Slice cucumbers, tomato and onion and place in bowl. Add olive oil and red wine vinegar and salt and pepper and toss to coat. Place in fridge until ready to serve. I like it better the next day, flavor is better. an easier way is to use italian dressing instead. Just toss italian dressing with veggies.
 

I too have an abundance of cukes this year, must be the North Carolina weather :sunny: . Our favorite way to use them up is Cucumbers in Sour Cream. I don't have a measured recipe but......

I peel and slice thinly 3 - 4 cucumbers (if they are overgrown, I will remove the seeds too). In a bowl I add about 1/2 cup sour cream, wisk in a couple tablespoons of sugar and then add about a tablespoon (maybe a little more) of red wine vinegar. Then toss the cucumbers in this dressing. Chill until ready to serve. But don't make it too soon before serving, or the cucumbers don't seem to stay real crisp.

I have a fridge full of cucumbers, so if you start to run low, let me know, I'll run some down to ya.
 
My nana always used to peel and slice the cucumbers - put them in a bowl and add water to just cover them. Then add vinegar, salt, pepper, and sugar to taste. Let them sit a few hours, then enjoy a great tasting treat.
 
no canning frig pickles
7 cups very thin sliced cucumbers
2 med onions sliced
sprinkle with table salt. then let sit for about 2 hour. drain and squeeze out all liquid. Don't wash.
2 cups sugar
1 cup vinigar
stir til sugar disolves pour over keep in frig.


I have made these by adding 1 less cup of sugar and then freezing them. I was still eating them months later and they were very good. I even rinsed them after thawing them and put salad dressing on them.

Boy do I wish I would have planted my garden this year so I could have made these.
