Just to clarify for you, you can only make a deposit and payments when you do not book using DVC member services and points. When you use points and pay cash for remaining passenger(s) those cash fares must be paid in full the day it is booked.
Now if you book a Disney cruise through DCL or a travel agent, you can of course make a deposit and then payments. Final payment is due 60 days ahead of your cruise date, however.
You can also rent out your points and use the cash to book entirely through the cruise line instead of through DVC. Many folks do like to do that as well.
