Crockpot Ideas for a Late Supper?

We're picking up friends at the airport 8:00(ish) and will have an hour's drive home. They'll be on Germany time will have been traveling all day so I'm thinking a quick dinner at home will be best. Any ideas for something light I can have in the crockpot? Chili and bolognese feel too heavy for a late dinner. No seafood or anything too exotic or spicy. One of our guests is very meat and potatoes :-)

How about some kind of soup? One of my favorites is beef, vegetable, and farro (farro does well in the crock pot because it doesn't get soggy even if it cooks for a little too long - it tastes a lot like barley). Or you could do a chicken soup, cook the pasta separately and just stir it in when you get home and let it warm up for a few minutes.
 

I'd make a cold chicken salad (poached chicken breast, grapes, celery, mayo, s&p, and fresh rosemary in the poaching liquid is a go-to of mine) and then crisp some bacon and leave in the fridge and have lettuce and tomato handy. That way, your guests could make either a chicken salad sandwich, a chicken salad salad on a bed of lettuce, a BLT, etc...serve with a bag of chips and some strawberries and be done...

AND if they don't need to it, b/c they get delayed/eat somewhere along the way/don't feel good, it still totally works for the next day's breakfast and lunch...
 
I would have everything sliced up, and bacon cooked (just reheat in microwave for 15 seconds), and have BLT's. Serve with baked beans, chips, and some cut up fruit. Prep before hand, and it will literally take you as long as it takes to pull it out of the fridge and heat the bacon.
 
Soup and sandwich sounds perfect, thanks! I think I'll buy sandwich fixings and make a tomato bisque. That way we can have it later if they're too tired out to eat.

Much as I love my crockpot, I like the soup and sandwich or breakfast ideas--something simple and quick. And added bonus, if they don't get used on arrival day, the ingredients are there for tomorrow's breakfast or lunch. So, you're covered if your guests aren't hungry when they land.
 
Spaghetti and meatballs.

I had frozen meatballs with sauce on low all day, I already prepared the noodles ahead of time. They also came in from Europe. I also had Hawaiian Rolls and the kids made little meatball sliders. They were a hit. Super easy.

This, if anything. If you get home about 9 PM, their body clocks are going to feel like it's 4 AM. Might as well make breakfast. If you want to use the crock pot, maybe oatmeal?
 
Honestly, after doing that flight several times, I wouldn't really eat much of anything. The key is for them is to adjust to the time change, so they should really be going to bed when you get home. Don't try to small talk or catch up, save that for the morning. I would have something light like the sandwiches, so they can make something if they are hungry, but I would honestly push for them to just go to bed and chat in the morning. It will truly help to adjust! Coming back here isn't as bad as having to go back to Germany and adjust. ;) Keep it simple and don't stress over it! :) Enjoy their visit!
 
Another thought, along the lines of what the PP said--they might want to go straight to bed...but then they might be up at the crack of dawn due to the time difference. So, I would either tell them or leave them a nice note, pointing out where the coffee maker is, help yourselves to whatever's in the fridge and the pantry (eggs, toast, etc.), and so on. That way, they feel like they can actually get up when their bodies say to, and grab coffee or breakfast or whatever, without waiting for the entire household to arise. I remember one trip to Hawaii, we faced numerous flight delays and didn't arrive until 9pm Hawaii time (from the East Coast). I was exhausted and fell into the hotel bed, but I was bright-eyed and wide awake at 3am!
 
We often arrive late at my parents home. They always have cold cuts available in case we are hungry. If not we have them for lunch with next day
 
Put some chicken in the crockpot and put it on top of the salad. Just use bagged salad. You can always cook up a loaf of garlic bread and rewarm it in the oven.
 
Thanks everyone! This will be their fourth visit and we usually sit up for a while. They like to stay up as late as possible to help with the jet lag. I usually do a really nice welcome meal that first night and we spend a few hours catching up. The difference for this trip is that I'll be picking them up at the airport and want dinner ready when we get home. They usually rent a car but I (the cheapskate) urged them not to because we leave for a week in Las Vegas two days later.

Then when you get home you can scramble up some eggs to serve along with it.

** remember to use a crockpot liner when making this. After you have scooped out the leftovers, simply tie the bag shut and toss in the trash. Clean up is a breeze then.

This sounds amazing! I bet it'd be awesome in a breakfast burrito or even adding sausage or churizo! We're making it this week!!
