Crockpot and Easy Meals "Index post 372"

Last night we had vegetable beef soup in the crock pot and I did not see a recipe so I will share.

Chunky Vegetable Beef Soup

3 cups vegetable juice
2 cups hot water
1 bound beef for stew, cut into 1 inch cubes
8 cups frozen mixed vegetables
2 medium potatoes, peeled and cubed
1 small onion, chopped
1/4 cup ketchup
3 tablespoons beef flavor instant bouillon
1/2 teaspoon pepper

Combine all ingredients in the crockpot and cook on low for 8 hours.

It was yummy and made a ton for lunches this week.
 
Making the pot roast right now. It is my favorite recipe!

1 can cream of mushrooms soup
1 package Lipton onion soup mix


I put carrots, potates and onions on bottoms of crockpot, pour half the combined soup mixture. Put roast on top of vegetables (I brown the meat first but you don't have to) and spread rest of mixture on top.

Cook all day! The meat is so tender, it falls apart.
 
We did not like the Cranberry Pork at all. The Orange Chicken burnt and didn't have a good flavor, threw that out. The favorites are still Chicken and dumplings and the Chicken Taco Soup (we liked the old taco soup recipe I used to use but I can't find it!) It had a packet of Ranch dressing in it...was that from these???

I use the same sauce with turkey meatballs and it is delicious!! We buy the frozen pre-made turkey meatballs (which are surprisingly very good) and use the chili sauce and cranberry sauce (no brown sugar). It's always a crowd pleaser, especially at pot-lucks!

Shredded Pot roast (I use for taco meat)
2 lb beef bottom roast
1 cup water
lipton onion soup mix

8 hours and it shreds with a fork! Mmmmmm.
 
I made the Buffalo Chicken yesterday and it was great. I found Hooters wing sauce at Walmart so I used that and it was so good my husband is actually eating leftovers! I found out that my Crock Pot cooks really fast, I used frozen chicken breasts and the direction said to do it for 6-8 hours it was done in about 4 so I will keep that in mind from now on. So glad I found this thread, thanks to everyone for these great ideas.



Slow Cooker Buffalo Chicken

2 lbs boneless, skinless chicken breast
1 bottle buffalo wing or hot sauce ( I use either Red Hot or Steve and Edy's)
1 packet Hidden Valley Ranch Salad Dressing mix

Place chicken breast in crock pot, sprinkle dressing mix over chicken and pour wing sauce on top.

Cook 6 - 8 hours for frozen chicken breasts or 4-6 hours for fresh chicken breasts.

Shred chicken with two forks when finished and serve on rolls.

Made black beans and chicken last night and it was very yummy. I will have to double the recipe next time. Going to make the lasagna today.


Here is my crockpot roast recipe

1 can cram of mushroom
1 can cream of celery
roast
carrots
potatos

cook on low all day
 
I made the Mac n' Cheese last night and it was just a good as the first time I made it. Tonight is the Creamy Pork Chops. It smellls so good!
 
Made the Chicken and Dumplings. Really good, but not spicy enough for us. We'll add garlic and paprika likely next time!
