Crockpot and Easy Meals "Index post 372"

Pepper Steak

2-3#s bottom or top round, thin, frozen, cut into strips (excess fat removed)
1 small can of tomato sauce
worcheshire sauce
hot sauce
2 tbsp brown sugar
1 package brown gravy mix
1 medium onion julienned
1 green pepper julienned
1 orange/red/yellow (which ever color you have) julienned

Put crockpot on low. Add tomato sauce, few shakes each worcheshire and hot sauce, brown sugar, brown gravy mix. Mix to combine. Place frozen beef strips on top. Place veggies on top of meat. Cover. Cook 6-8 hours low.

Serve over noodles or rice. Meat is extremely tender.
I am going to try this one for the mother-in- law on Thursday! Looks great!
 

Pork chops and stuffing

2 or 4 pork chops
2 cans cream of mushroom soup poured over
1 box Chicken Stove top stuffing
Pour a little water over this (1/4 to 1/2 cup)
Slice one apple on the top

Cover and cook for 5-6 hours on low

You'll have roast pork with stuffing, and the apple adds a nice touch.

I put this on the menu for Thursday. Thanks!
 
^^I hope your pork chop/Stove Top turns out bette than mine. We didn't like it but I do want to try another pork chop meal I printed from this thread. Please let us know how it turns out, then I know I did something wrong.

The chicken dumplings was great! I'm thinking of adding some carrots next time.
 
the chicken wing dip looks great. we are having a retirement party for my boss at work soon. i will defenetly be making this. its seems easy and sounds delicious. when u use the rotiserie chicken, how many cups do u use?


I'm sorry I didn't see this sooner; I use about 2 cups but it depends on how much chicken we have left. Less would work. :) Last week it turned out pretty spicey so I added in a bit more ranch dressing to tame it down. I also use a very small crockpot but also can be done in microwave,stove, even a disposable pan on a grill for tailgating.
 
Lentil & Black Bean Soup

1 cup brown lentils
3/4 cup dried black beans or 1 can beans
3/4 c EACH diced onion, celery and carrot
1 box (28 oz) veggie stock
1/2 c strong coffee
1 bay leaf
1 tsp ground cumin
1 tbsp chili powder
1 can diced tomatoes, undrained
salt & pepper to taste


Soak beans overnight in crockpot. Drain water. Combine remaining ingredients and cook on low 6-7 hours or high 3-4. Remove bay leaf. Serve w/ hearty whole wheat bread.

Ingredients cost about $6. Serves 4, $1.50 per serving (not including bread).
 
This one is my own creation and my husband's favorite. Hope you like it too.

3/4 c dried black beans or 1 can
3/4 c dried red kidney beans or 1 can
1 c brown lentils
1 med. onion, chopped
1/2 c chopped carrots
1/2 c fire-roasted corn
6 oz tomato paste
1 14oz can diced tomatoes
2 c veggie stock
1/2 c strong coffee
1 clove garlic, minced
1 - 2 tbsp chili powder, to taste
2-3 tbsp chiptole in adobo, chopped (optional) or Hot sauce

Soak beans in crockpot overnight, drain in morning. Combine all ingredients and cook on low 6 - 7 hours or high 2 - 3 hours. Add more stock if too thick.

Serves 4.
 
one I made yesterday (from pillsbury)

Chicken Ratatouille Stew from Pillsbury.com
4 boneless, skinless chicken breast halves, cut into 1- inch pieces
1 (28- to 30-oz.) jar spaghetti sauce
1 medium eggplant, peeled, coarsely chopped
2 tomatoes, coarsely chopped
2 small zucchini, sliced
1 green bell pepper, cut into 1-inch pieces
1 large onion, chopped
3 garlic cloves, minced
1 teaspoon dried basil leaves
1 teaspoon dried oregano leaves


1. In 3 1/2- or 4-quart slow cooker, combine all ingredients; mix well.
2. Cover; cook on low setting for 8 to 10 hours or until chicken is no longer pink.

I never knew about crockpot liners -- wow, how awesome!!!! The DIS :worship:

I like to put a pork roast or boneless chops in the crockpot with just a can of mushroom soup -- so rich and delish over rice!

Also, lazy-man's stuffed cabbage...

2 lbs very lean ground beef
A chopped up onion
A little handful of instant rice
A jar of spaghetti sauce
A head of cabbage, chopped

Put it all in the pot and cook it all day on low.

As you can see, I just throw stuff in more than have a written recipe. But I find that crockpot meals are pretty forgiving!
 
Here is a recipe I tried the other day - I actually found this on a Weight Watchers board a while back. Really, really good!! Just remember that you'll want to let your chicken "marinate" in the rub for a good while...I let mine rest in a Ziploc bag overnight, and it was SO good :)

Crock Pot Roaster Chicken

1 large roaster chicken
1 onion, peeled and quartered
1/2 cup cooking sherry (or chicken broth)
2 tablespoons butter
2 tablespoons cornstarch, mixed with water to form paste
Dry Rub:
4 teaspoons salt
2 teaspoons paprika
1 teaspoon cayenne pepper
1 teaspoon onion powder
1 teaspoon black pepper
1 teaspoon thyme
1/2 teaspoon garlic powder

1. Mix rub ingredients.

2. Remove inards from chicken and wash and dry. Sprinkle rub inside and out of bird and under the skin. Place in a large ziploc and marinate in fridge for at least 2 hours, overnight is better.

3. Place a rack in the crockpot (if you do not have one, cut veggies can be used or make a rack using crumpled tin foil...this is to keep chicken higher than juices). 



4. Add butter and sherry to pot. Stuff bird with onion and place on rack. Cover and cook on low for 8 - 10 hours. 



5. Remove chicken to cutting board and let rest about 10 minutes.



6. Strain juices into a sauce pot and bring to a boil. Stir in cornstarch/water and keeping stirring until thickened.

7. Remove skin from chicken and carve. Serve with gravy on the side.

I made the pork chop/stove top last weekend and my family loved it as did I. I serve it with cranberry sause on the side, the chops fell off the bone. Soo Good. :woohoo:
 
When recipes call for chicken breasts or pork loin....can those be frozen and then cook longer? or should you thaw the meat?

not sure what I did wrong but I tried this and it was way too soupy :eek:

I've made it twice now, it's definately a hit here and SO easy! I think it's supposed to be a little soupy, I shred the chicken and use a slotted spoon so you can just as much gravy as you like. I also cut the biscuits into fourths before putting them in to cook.
