Crockpot and Easy Meals "Index post 372"

This is probably a dumb question, but do you cut the chicken into bite sized pieces before you cook it or anything? My family loves chicken & dumplings, but I've never tried making it, but this sounds like something even I could tackle:laughing:.


It's really easy to make this. I made them tonight using chicken breast tenders (they were on sale) but they work the same for whole breasts. They are so tender you can shred them a little with two forks right before you add the biscuit dough.

I'm glad everyone likes the recipe! I got another one off the crockpot 365 blog called cream cheese chicken...

Frozen chicken breasts, cut into chunks (I got fresh breasts, cut them up and then froze them overnight in a ziploc bag so they were ready to go)
Can of cream of mushroom soup
Packet of Italian salad dressing mix
1/2 cup chicken broth (I didn't have that so I subbed chicken bullion cube with 1/3 cup of water)
2 cloves minced garlic
1 block cream cheese

Put everything into crockpot but the cream cheese. Cook on low 6 hours, then shred the chicken. Mix in the cream cheese, set temp to high until the cream cheese melts.

This was delicious (I made it for the first time Tuesday)! I served it over egg noodles. It's not for those watching their waistlines though!
 
Fantastic recipe ideas! I LOVE my Crock Pot. I especially love using frozen meats in it. Even less work! :lmao:

We do a very simple recipe with chicken.

Chicken and Soup

4 Frozen Chicken Breasts
1 Can Condensed Soup (Cream of Mushroom, Chicken, etc.)

Cook all day and enjoy! We add a veggie (sometimes in the crock pot, sometimes as a side), and fruit and call it a mea. Pick any soup you want. Don't add the water/milk, just the soup in the can.


Also, I recently discovered the FREE Crock Pot app for my IPhone. It's fantastic, and it was FREE. :thumbsup2
 
Here's another I made the other night:

Mexican Ench. Bake

4 cooked chicken breasts, shredded or cut into cubes (I shreadded it)
1-2 cans ench. sauce
shredded cheese (as much as you like...we use about a whole bag!)
corn tortillas
1 can refried beans

You can either layer everything (tortilla, beans, chicken, cheese, repeat) or do tortillas on the bottom and top only, with the filling in the center (this is how we did it). Top with ench. sauce, then cheese. Bake on low 4-5 hours.

You can also add salsa or any other items to spice it up a bit. It was SO GOOD! To make it even easier (and at times less expensive), use can chicken. I put our chicken breasts in the crock pot and cooked it on low over night (they were frozen), shredded them in the morning and added everything else (I used a different crock pot).
 
Crockpot Chicken with Black Beans and Cream Cheese:

Ingredients
4-5 boneless chicken breasts
1 (15 1/2 ounce) can black beans
1 (15 ounce) can corn
1 (15 ounce) jar salsa, any kind
1 (8 ounce) package cream cheese

I'm making this tonight. We'll either do it as taco filling or as "fancy nachos". :banana:
 

I'm making this for dinner tonight. I know I saw other chicken soup recipes on here, but this one is super easy and is all natural and is none of the products have preservatives. Plus it's gluten free, which for my family is necessary.

I basically just used what I had on hand:
1 large boneless skinless chicken breast
some frozen corn
3 skinned potatoes cubed
a couple of handfuls of baby carrots sliced in half
brown rice
lots of spices
2 bay leaves
water

I know this sounds lame compared to most of your recipes, but it's really good. I just put the chicken in the crock pot frozen, added potatoes and carrots (would have put in onion if I had any). Covered with water and put in lots of spices. Salt, pepper, dried onion, garlic powder, ect (forgot to put the bay leaves in at this point). Let it cook all day. About an hour before serving I threw in the corn and added the bayleaf. I also shredded the chicken and added back into the crockpot. I cooked the brown rice on the stove because I can never get the rice right when I put it in the crock pot. To serve I just put the rice on the bottom of the bowl and ladel the soup over it and stir. It actually tastes really good. You would never know you didn't use a stock to make it.

Also I think it cost me about $2 to make the whole pot. So it's super budget, since there aren't many meals you can make that feed 4 for $2!

About how much on the spices? 1/2 tsp? more or less?
 
This is a great one I got online a couple months back and my family loves it!

Salsa Chicken

4 Boneless skinless chicken breasts
1 packet taco seasoning
1 cup salsa
1 can cream of mushroom soup
1 cup sour cream


put chicken in slow cooker, sprinkle seasoning on top. Add soup and salsa and cook on low 6 hours. Add sour cream after cooked and stir together. Serve over white rice.

* I have cooked on high for less time MOST times I have made it, and works out just fine. It has become my quick meal in a pinch. Also I use the cream of mushroom- Healthy Request, and I use only a half packet of seasoning to cut the sodium, and the taste is still great! ENJOY!

I dont like mushrooms. Any other soup to use with this recipe?
 
Made the whole chicken with lemon juice Tuesday and it was yummy!

Made the Split Pea soup yesterday with a ham bone frozen from Christmas:

not sure if this is on here but i have a super easy on called salsa prok
it is a boneless pork roast and a jar of slasa
cook on low for about 8 hours( depends on size of roast)
Then shredd and add to tortilla shell with all the yummy fixings
If you find it to watery then take out the pork before you shredd it
 
I was thinking about trying the chicken/black beans/salsa/cream cheese recipe and was wondiering what kind of frozen chickeny'all are talking about. The chicken that comes in the bulk bags already frozen or chicken that you have purchased from the meat counter and frozen. Thanks

:lmao:I thought you guys would get a kick out of this. I was trying out the hotwings sauce/ranch dressing/chicken recipe today. I had my crockpot on high for 2 and half hours before I discovered that it wasn't plugged in :scared1:!!! I'm such a DORK!!! It looks like we're having leftovers for dinner tonight and trying the hotwings chicken tomorrow! --Katie
 
Is it possible that my crock pot is bad?? I have one that I got years ago and it has a ceramic crock. I made the chicken/salsa/blk bean/ corn/ cr cheese recipe today with frozen boneless breast and it only cooked for 4 hours on high and the chicken was still dry....wth???? Not to mention the color of the dish was not appealing at all. Ive tried other recipes with frozen boneless breast and its always dry. Should I get a new crockpot? I have yet to cook something in there that i liked:confused3

Tonight I made Tortilla Soup
1 jar salsa (your fave)
2 c chicken broth
1/2 lb browned & drained ground beef
Simmer for 20 minutes.
Dice 1 avocado, place evenly in 4 bowls
Pour soup over avocado.
serve with cheese, sour cream and either tortilla chips or make your own tortilla strips.

It was yummy!

ETA: Sorry, i just read through the thread. I didn't realize it was mainly crockpot recipes, I thought it was easy meals too. I found lots of great recipes, though. Thanks!

Here are a few of my favorites :)

Crock Pot Sloppy Joes
Serves 8


2 pounds ground chicken, turkey or beef
1 onion, chopped
2 cloves garlic, minced
1 cup ketchup
1/2 bell pepper, chopped
3 tablespoons Worcestershire Sauce
3 tablespoons brown sugar
2 tablespoons mustard
2 tablespoons cider vinegar
1 1/2 teaspoons chili powder
Hamburger buns

1. In a heavy skillet, brown ground chicken with onion and garlic. Drain off excess fat.

2. Combine ketchup, bell pepper, Worcestershire sauce, brown sugar, mustard, vinegar, and chili powder in slow cooker. Stir in ground beef mixture. Cover and cook on low setting for 7 to 9 hours.

3. Serve spooned over hamburger buns

French Dip Sandwiches
Serves 6-8


3 pounds lean beef bottom round roast, trimmed
2 cans beef broth
1 onion, sliced (optional)
8 ounces mushrooms, sliced (optional)
2 cloves garlic, minced
1/4 teaspoon thyme
splash Worcestershire sauce
hoagie rolls, french rolls, etc
mozzarella cheese, or preferred cheese

1. Put a cast iron dutch oven over medium-high heat. Preheat oven to 275˚.

2. Trim roast of all visible fat (roast should be lean, otherwise the Au Jus will be very greasy). Rinse off roast and pat dry. Liberally season with kosher salt and black pepper on both sides.

3. Drizzle olive oil in dutch oven. Place roast in pot, and let sear for 4-5 minutes. Turn and let sear another 4-5 minutes.

4. Transfer roast to a plate to rest. Add garlic and saute for 1 minute. Add beef broth, onion, mushrooms, thyme, and Worcestershire sauce and stir. Add roast, cover, and bake in the oven for 3-4 hours, or until tender.

5. When roast is done, take dutch oven out of the oven and shred the meat; recover and allow to rest.

6. Turn oven to broiler. Place cheese on top half of rolls and broil top and bottom halves for 2-3 minutes, or until cheese is melted and bubbly. Watch carefully, as it will burn quickly.

7. To assemble sandwiches, place shredded beef on the bottom half of the roll and drizzle a little of the drippings over the top just to lightly moisten the bun. Top with other bun, and cut in half for easier handling. Serve with a bowl of Au Jus (the broth) for dipping.

**Optional - Can be cooked in a crock pot. Brown roast in a heavy skillet, if desired, then place in a crock pot, along with the remaining ingredients. Cook over low heat for 6-8 hours, or until tender.

Crockpot Pork Chops
Serves 6


6 lean boneless pork chops
3 cans Reduced Fat Cream of Chicken Soup (do not add water)

1. Place 3 chops in bottom of crock pot and cover with 1/2 chicken soup. Repeat with remaining.

2. Cook on low for 6 hours. Serve over rice, using soup as a gravy.

Crock Pot Pork Chops and Apples
Serves 6


6 pork chops, cut thick
6 ounces Stove Top Stuffing - Pork flavored; prepared
1 can (20 oz.) no-sugar added apple pie filling


Brown pork chops and drain off any fat. Spray crock pot with cooking spray. In crock pot, put the browned chops, top with prepared stuffing. Top with the 20 ounce can of apple pie filling. Cover and cook on low for 4 hours, until meat is tender.

Swedish Dill Pot Roast

4 pounds roast (any type)
4 tablespoons dried dill
2 tablespoons vinegar
1/4 cup water
1 cup sour cream

1. Place roast in the crock pot with 2 Tbsp of dill, vinegar and water. Let cook on low for 6 hours/high 3-4 hours or until done.

2. Once meat is cooked take out of the crock pot. Add remainder of dill and sour cream while stirring the liquid. Once heated and combined, add meat back to the sauce and serve.

**Excellent served with mashed potatoes

I'm getting ready to prepare the earlier recipe for Kielbasa & Saurkraut, but I must admit that I'm feeling skeptical. The cook time is stated as 6 hours on low, but that seems like an awful long time for keibasa. Has anyone else made this dish? Do you pre-slice the kielbasa? :confused3

I'll let you know how it turns out. Cross your fingers...
 
I love my crockpots (I have 3) but absolutely hate cleaning them. It seems that stuff sticks to the sides of them more......or maybe its just that they are so big and bulky they seem like a bigger hassle to clean than other pots, pans and dishes. For that main reason I don't do a lot of the things that I see in here that look good. Like pork chops.....I don't want to have to clean the crock pot for pork chops when I can cook them on the grill or the stove and have less to clean.

Any tips on making clean-up easier so I can use mine even more?

also there are some absolutely yummy looking recipes on here that I know my family wouldn't eat.....with a house full of picky eaters its hard to find something that all of them will agree on. All the salsa-y, peppery things are out which really disappoints me because I know I woulde probably love them.

I did write down the smothered meatloaf (minus the mushrooms :sad2:) the chicken and corn - just to try cooking corn in the crock pot, and the chicken and dumplings. That seems like a good start for me. We are so scattered in the evenings I don't cook a meal every night.
