Crock Pot meals!

I am loving the recipes for the crock pot!!! :love: I'm going to try some of them this week. I have 2 crock pots so I may do 2 meals a day this weekend for dinners all next week :thumbsup2. I hate to come home and cook after a long day at work.
If anyone else has any recipes please post them.
I also have a dutch oven if anyone has any recipes for it.:rolleyes1

There's a thread on here titled Summer Crockpot Recipes. Look it up. There are tons of recipes. I would post the link but I'm on my phone.

Corned Beef

2-3lb beef brisket (already brined & spiced - look for one with very little fat)
1 medium onion - sliced
2 Bay Leaves
1/4 cup apple cider vinegar
1 large carrot - sliced
1/3 cup brown sugar
1 Tbs. Salt

Place brisket in a 4-5 qt crock pot; add all other ingredients; add enough water to cover brisket. Cook on low 6-8 hours. Transfer brisket to cutting board and cover with foil; let rest 20-30 minutes before slicing.

While the meat is resting, strain the cooking juice and pour into a large stock pot or dutch oven. Quarter about 1.5 lbs of new potatoes; cut a 1-2 lb head of cabbage into 6-8 wedges; put in stock pot of cooking liquid; add small bag of baby carrots; add water to cover, if needed. Bring to a boil then turn down heat to medium-low & let simmer for 25-30 minutes, or until veggies are cooked.

Kielbasa and Cabbage

1lb Smoked Kielbasa - cut into 1/2" disks
3 medium Idaho potatoes - cut lengthwise & then sliced into 1/2" slices (just wash potatoes & don't peel)
1 small cabbage - shredded
2 medium onions - cut in half & then cut into 1/2" slices
1 14.5 oz can of chicken broth
Salt and Pepper to taste (I don't use salt - but that's my preference)

Put first 4 ingredients into a 4-5 quart crock pot and mix well; add chicken broth. Cook on low heat 8-10 hours.

Neither has to be cooked.

just pop the top and enjoy,(IF you don't read the ingredients)

Oh.... and an easy, squeezy breakfast on the run recipe I recently found (no cooking at all) and is very yummy:

1 21oz can of pie filling (my favorite is cherry)
1 cup DRY oatmeal (quick cooking or regular, not instant)
2 cups vanilla yogurt

Mix everything together (stir it good) & let sit in fridge (or cooler) overnight. Makes 4 - 1 cup servings. It stays good for about 3 days in fridge - then it starts to get runny. Runny oatmeal is not good eats!

Was wondering what to give GS for breakfast this week when we go camping. This sounds great! To all the other posters, now I have to print this whole thread :love:
 
Something super easy I do is put a pork roast on and let it cook all day, then pull it out and shred it, mix it w/ bbq sauce and have pulled pork sandwiches! We did this last year, we were camping in a pop up so I left the crock pot outside cooking, went to Animal Kingdom for extra magic hour in the afternoon and came back to a yummy dinner! Worked out nicely.:banana:
:thumbsup2Just did this for the 1st time about a week ago with a 6-7 pound Boston Butt....and it was fab!!! We had pulled pork sandwiches for about 4 days! Definitely a new favorite! I also like to make coleslaw using the bagged mix from the produce dept. and mixing with the coleslaw dressing. Let it sit overnight for best taste. Much better than deli slaw...IMHO.:goodvibes

Found it.

I have a cookbook that we use all the time on scouting camping trips with dutch ovens.

It's called 'Cooking the Dutch Oven Way' by Woody Woodruff. I got it for around $12 at our local scouting shop, but i bet you can find it online or at a good camping store.
 
Count on campers to have the best recipes! Yum!

I've mentioned this Dutch oven blog before (because I love it so much), but it's definitely worth checking out. She's cooking out on her D.O. every day this year -- she's had some fabulous recipes posted!
