I second everyone's concern about leaving in a hotel room all day. However, if you are in a condo with a full kitchen - I guess it isn't any different than if you did it at home. (But is this your crockpot and you know how it cooks? - my new one cooks a lot "hotter" than my old one) I would still be nervous. But here are my favorite crock pot recipes that don't require many ingredients:
BBQ Chicken - bottle of your favorite BBQ sauce and chicken / cook on low all day
Melt in your mouth sausages - italian sausage, 2 large cans of spaghetti sauce, small can of tomato paste, 1 T parmesan cheese, (optional - 1 t parsley, sliced green pepper, sliced onion - I have done without these but it is better with them) Brown sausage in small amount of water. Combine all in crockpot and cook on low. (My husband and kids favorite) We serve on a bun but you could cut up and serve over pasta.
Saurkraut German Potato Salad - 1 can saurkraut, 1-2 cans Reads German potato salad (it comes in a can and is usually near the canned veggies at the grocery store - may be hard to find based on where you live), 1 pkg. polish sausage (near the hot dogs) cut into 1 inch pices (I use turkey sausage). Combine in the crockpot and cook on low for 3-6 hours. Easy great German meal if your family likes saurkraut.
Shredded Beef/Goose/Venison sandwiches - This is very easy but does take some time shredding when you get back. My husband hunts so we have wild game but works well with beef too. Brown your meat in a small amount of butter and minced garlic (if you have it), put in crockpot, cover with canned chicken broth (just enough to cover - usually a can or two - if you are short just add water) and 1-2 T worcestshire sauce. Cook on high all day. Shred meat with fork and serve on buns.
My mom also did one with pork chops and chicken/rice soup. I can't seem to find it - but I believe that was about all there was to it.
