Crock Pot Help?? - Chili to be specific....

Help me! With my mother in the after-life I have no one to ask about using a crock pot. My mom could cook anything in a crock pot. You name it - she could make it. I bet she could have made cookies in the crock pot. LOL!

Anyways... Im bringing Chili to work tomorrow. I was going to make it tonight... and I was thinking about Crock Potting it over night? But is that too long?? I mean, if I made it at like 9 tonight - I get to work at 9 - thats 12 hours! Is that okay???

Im afraid if I make it tonight, and stick it in the fridge - will it warm up in time, if I crock pot it in the morning? Or would I need to heat it up in the pot - and then stick it in the crock pot? But doesnt that defeat the purpose of the crock pot???

I appreciate any crock potting advise.
 
I made veggie chili in the crockpot overnight this week. It was fabulous. I assume you are making meat chili, but if you are using beans-do not used canned. I used dry and did not pre soak them. I used more water than my usual recipe in order to soften the beans.

Wait - so if I do meat and beans - add dry beans? Really?

Maybe I could add the canned beans in the morning?

That would probably work too. I just cooked the dry beans overnight and they were great. I think if you cooked canned beans for over 12 hours, you'd have bean mush, not chili.

ETA: Hey that's my 7000th post...and it's about beans. LOL

I just did chili today in the crock pot. I came in from work and the house smells wonderful! I put in on this morning before I left at about 8. It is 430 and it is done. I used canned beans. I turned it to warm and will let everyone eat as they come and go all evening. It will still be fine at 9 when DS gets home form school. Perfect fall meal. It turned very cold and rainy today.
