Traveling with Hubby at two kids - 4 and 1. 1 YO is non walker. She must nap. 4 yo son can skip nap at home but I anticipate him ending at Disney. We have the regular dining plan. Using disney buses with a few cab rides.

June 2

Arrive at MCO at 2:40

Take ME to Pop for check in

bus to AK ( open until 8) to hit safari (have FP for 6pm) and a few others ($30 extra for 5 day v 4 day so decided to get to AK for a couple hours- I'll honestly be happy if we only do the safari if we get delayed or the kids are too tired)

June 3

Breakfast @CP @ 8:15

Fast passes for - A&E (son obsessed), mine train (will use kid swap) and Enchanted tales with Belle.

Break to Pop for nap/light lunch

back to MK or straight to Chef Mickey's depending on nap length. CM ADR 6:20 Pirates and Pals Cab back to pop

June 4

HS - have early EMH, May or may not use since night before is a long day

Fast pass for TS mania, disney jr and Indiana jones ( Indiana is hubby's pic)

Lunch at 11 at h&v- kids love disney junior so this is a must do

Back to hotel at 1 or so for nap

Dinner at OHana's at 6- May do bus /monorail both ways or take cab one way of kids seem to need rest... But I think son would love monorail as he loves trains.

June 5

Extra EMH at MK

Breakfast at CRT 10:15- paid OOP

FP for splash, haunted and Thunder - will use swap on SM and BTM

Lunch or snack, rest Parade at 3 (this is stretching it but not sure how else to do parade.) is there a good resting spot in MK?

Back to Pop after parade, hang at hotel, pool, nap as needed

Is any of this too ambitious or does it look okay?

I've only been to wdw as a kid, DH went as a high schooler 12-14 years ago. We plan to go back at some point. DD will nap in stroller, both will likely nap on plane to MCO. DS might nap in a stroller but he hasn't spent much time in a stroller for a while so I'm not sure.

We will have baby carrier for DD, which she will also nap in.

Also, we have a preferred room at pop and requested the 60s- thoughts on if that's good or I should change request?

Overall your schedule looks great.
I would be prepared to skip AK on the first day, though. If everything works out and you feel up to it, great! I'm not sure if you've flown with both kids yet, but it's exhausting. I have a 5 and 2 year old and we flew with both for the first time a few months ago (have flown with the 5 year old a ton). I vastly underestimated how much more stressful and exhausting it is with two. All of which is to say that all 4 of you may very much need some down time at the hotel to explore, look around, go to the pool, etc. the first day. Plus, at least my kids LOVE being in a hotel and think just being there is awesome, so we like to give them some time to settle into the new place and enjoy it.

You mention a few times about using the baby swap. I just want to make sure you understand how it works. It's AWESOME for your situation, but it doesn't replace the fast pass for the first riders. This is how it would work (for example):
All four of you approach the cast member at the entrance, show them the baby and ask for a baby swap pass. Then, DH and son get in line. If they have fastpasses, they can get in the fastpass line, otherwise they get in the standby line. You and baby go play somewhere else while the first pair rides. At any time later, you and son get to go ride again, this time using the babyswap pass to get in the fastpass line.
So, for example, you say Mine Train using baby swap. That will still require your son to wait in a very long standby line to ride the first time. If, on the other hand, your son and one of the adults get a fastpass for mine train, then he can ride it twice and both adults can ride once using the fastpass line. Does that make sense?

As for naps... My son is a terrible stroller napper, so we usually went back to the hotel. Which often involved him falling sound asleep on the bus :-) Some other places that worked:
- We had one lovely day where we rode the boat between the Magic Kingdom and the TTC back and forth several times while DS slept. The cast was great, they let us just stay on the whole time and were really helpful and friendly. It was a nice cool, quiet place to relax.
- Took monorail to Contemporary and walked around the grounds for a while then found a quiet couch in the lobby and he slept there.
- Riding the epcot monorail loop over and over again (only worked once and failed miserably on the second day we attempted to nap there)

Looks good to me! Last trip we had a 1 yr old DD and a 7 yr old DD. We went back to our resort each afternoon and let the little one nap while the older one swam.

The only thing I would think about if I were you is paying for both CRT and Akershus. They are both extremely expensive and both are dining with princesses. I would personally pick one, but if you have the cash, enjoy it all!

I think you are going to be rushing to make that FP at 6:00 in AK on your first night.
 

I'm prepared to skip AK. We have flown with both kids, but DD was barely past newborn stage so it might be tougher this time!

I may try to move my safari FP back from 5:40-6:40 to 6-7....

We are dining plan for Akershus but CRT is OOP... I really like Belle, so that was my reasoning for Akershus but DS is obsessed with seeing the castle. Is this overkill? If so, Which one is better overall? That's probably a matter of opinion...
 
We do have FP for mine train, splash mountain and big thunder mtn, all of which we will need to use child swap on.
