Critique our dining and touring, please

Hi! We bought our flights, so are having to switch our plans around a little. Originally, we wanted to arrive early and hit MK the first day, but I don't think that will work now. So, we have a couple of options, and I would love any input!

Sat- arrival at 4:00 1900 Park Fare dinner
Sun- Epcot, Akershus breakfast
Mon-HS
Tues-AK, Tusker lunch, Ohana dinner
Wed-MK - we have 3 pirate makeovers here
Thurs- MK before leaving

This would give us a full day for each park and 1/2 a day at MK on Thurs.

Option 2:
Sat- arrival at 4:00 1900 Park Fare
Sun- MK
Mon-HS Prime time
Tues - EP Akershus am/ Ohana dinner
Wed-MK - Crystal and BoG / we have 3 pirate makeovers here
Thurs- AK before leaving - could do Breakfast at Tusker

Gives us two full days at MK, but squishes AK. I've never been to AK, so wasn't sure if this was doable. our flight leaves around 4:00.

If you plan on taking DME you need to be back at your resort by 12:30 on departure, day. DME leaves about 3 hours prior to departure, and that means departs your resort. SO if you have a 1PM departure time for DME< you need to be ready at the stop 15 minutes before.

ETA: You can plan on breakfast at TH, but that is a lot of travel time and park entrance for a relatively short period of time.

Also what time does your arriving flight land, and what time are you scheduling dinner? I would be hesitant to schedule a dinner on arrival night in case of delayed flights.

We will arrive at 4:00 and dinner will be at 7:00.

I wouldn't personally do breakfast at Tusker if you are going to squish AK to a few hours on arrival day. And I wouldn't personally do a lunch and dinner buffet/all.you can eat on the same day (first Tuesday option). You could move ohana to your mk day.
