Which restaurants need a credit card when making ADRs?

I think V&A, Spirit of Aloha, HDD, That's all I can remember.

To add a few: California Grill, the luau at the Poly & I am not 100% but I would imagine most (if not all) signature restaurants require a credit card. These would include: Jiko at the AKL, Flying Fish Cafe at the BW, Citricos and Narcoosee's at the GF, Artist Point at the WL, Yachtsman Steakhouse at the YC and the Hollywood Brown Derby at DHS.

Credit card hold always required:
Akershus
California Grill
Fantasmic Dining Package
Candlelight Processional Dining Package
CRT or dinner shows IF you reserve as a dining plan user

You will be billed for these only if you don't cancel within the required time and don't show up for the reservation.

Signature restaurants do not require a credit card hold with the exception of California Grill. (CRT is considered a signature - but that one is pay in full at booking unless you are on the dining plan)
