I realized today that I probably have enough of the basics (except bread and milk) until we move in 17 days. They will be disconnecting the fridge in 15 days though. So I am going to have to be really creative. Of course we will have turkey so I will have to figure out a bunch of leftovers there.

Now I just have to figure out how to use as much of the rest of the stuff as I can.

How have you been creative with perishable food?

I have a lot of meatballs, some chicken, and lots of cheese.

Its going to be interesting WFD in our house for next couple of weeks LOL

and yes I do realize that this is sort of a rambling post but I am just going through lists and trying to figure out what last minute things I need to get done. Forgive me if I bable LOL

With lots of cheese I would do a good homemade mac n cheese one night. Maybe a cheese souffle another.

Chicken is easy--I am sure you have a ton of recipes. If you have frozen vegies to use up a pot pie wouldwork well.

Meatballs can be done with spaghetti one night, sweet and sour over rice another and maybe in a creamy sauce with biscuits as well. Meatball subs are good too (so I am told--I don't eat beef or pork so I don't eat meatballs, but the rest of the family does;)). You can cut them into smalle chunks and top a pizza (uses more of that cheese), or add taco seasoning and use in tacos.

lots of crock pot stuff!

Chicken with various sauces you have lurking in the fridge (italian dressing, russian dressing, salsa).

Home made mac-n-cheese

a frozen veggie hot dish

meatball hot dish. YUM (had it last night). You need mayo, cream cheese, spag sauce, meatballs, and a thicker bread for it. We use italian.

great ideas thanks :)

They will pack the pantry (TG because that is huge and full!) but obviously the perishable stuff isnt going to make it the 13-14 hour drive

I have so much else on my mind meals are falling in priority

Two easy things with cheese:

Toss some tortilla chips on a plate, cover with grated cheese, top with salsa - nuke and serve the nachos.

Pimento cheese - jar of pimentos with liquid, mayo, grated cheese. Use for sandwiches or to stuff celery.

A couple of our favorites with chicken are a sweet and sour (using apricot preserves, onion soup mix and russian dressing), ala king (cream sauce with veggies over rice or toast), and stir fry. Enchiladas are also good.

I like the ideas you already received for the meatballs. We love them with gravy over egg noodles.

Have a great move. We are in the process of relocating as well.

Where are you guys headed? Its loads of fun isnt it? LOL

Thansk again for the ideas. I made orange chicken the other night and it was really good. I think meatballs and gravy over noodles will be dinner tomorrow. :)
