Creamed Cauliflower Recipe?

Hi everyone,
This is my first post on this board, so I hope this wasn't just asked! I recently had a low-carb meal at Ruby Tuesday's that came with creamed cauliflower, which was wonderful. I'm not even a big cauliflower fan, but I really liked it. My Aunt,on the other hand, loves cauliflower, and it would be great if I could make it for her (especially since she is going through chemo now, and I'm trying to think of nice things to do for her besides giving flowers) Anybody know how to recreate it, or have some good cauliflower recipes? Thanks!

There are a lot of variations on mashed cauliflower (also known as fauxtatoes, if you want to do a search)... here's my absolute favorite:

1 lb. frozen cauliflower
8 oz. cream cheese
2-4 Tbs. butter
chives
salt & pepper to taste

Boil cauliflower until soft. Drain well. Add cream cheese and butter to pan, and mash over low heat. Add chives, salt & pepper to taste.

Yum!

Many people make it with cream, butter and a little cheese... it seems to get soupier though (have to REALLY make sure the cauliflower is dry before you mash). I much prefer it with the cream cheese & chives, myself.
