Can we bring this? My two younger kids love to create stuff with crayola model magic or play with floam or moon sand, can they bring that on the plane?

If you can squish it between your fingers, the TSA considers it a liquid or gel. By that definition, substances that we don't normally think of liquids or gels -- such as peanut butter and modeling clay -- fall under the TSA's rules for liquids and gels.
 
Probably isn't the wisest idea to bring such things on the plane, considering the seats you occupy and subsequently vacate will be filled with new passengers about 22 minutes later. While you may be going on vacation, it's inevitably the passenger who is headed to a business meeting will get the floam or modeling clay on his or her suit.

Caveat: I am not calling your kids messy, nor am I calling you an inattentive mother... such products are inherently messy and not really ideal for public venues.

I usually bring crayons, a coloring book, and a 'sticker activity book'. It keeps her quietly busy with no mess.
Traveling with little ones always brings extra challenges, but if security ever took their clay or moon sand, it may create even a bigger stress for you. I recommend bringing things that you know will pass security so the trip is as smooth as possible.
 

I have brought small tubs of playdough a bunch of times since the liquid security rules have gone into effect and never had them confiscated. However, I would not be surprised if that did happen, there is so much variability with the TSA. Just get the little containers (under 4oz) and put in your child's liquid zip lock bag and you should be fine. However, bring lots of other stuff (sticker books, crayons and coloring books, travel games, pipe cleaners, leapster, portable DVD players, etc.) so your kids will have back up toys just in case.
 
I will probably go ahead and bring a small tub of playdoh, playdoh is calming for ds. He uses it as part of his therapy and we find it helps calm him down when he is frightened or nervous and sometimes all it takes is squeezing and rolling playdoh to thwart a tantrum. I plan on having tons of stuff for him to do, bought him a dvd player and leapster, have 2 nintendo ds's and a gameboy advance sp. I have a travel aquadoodle, mp3 player with his calming cds loaded on it (he uses these to sleep) and even his take along thomas train set. I will only pull out the playdoh if he appears to be agitated and will definitely make sure none is left behind for an unsuspecting passenger.
 
Just remember head phones and a splitter if two children are watching the same dvd or using leapster together. We found this toy...bring along Thomas...that is NOT takealong Thomas but a little wind up train in a tiny little case for travel. Your son might like that. I think it cost $10 and had trees and a horse farm and everything and fit on a tray table easily. Our guys LOVED it when they were smaller.
