Cowfish sauce

We are heading down to Universal on February 27th. I am about 8 years removed from my last Universal trip and this will be DH's first. I am so excited and just over planning because all the details get me even more pumped! I was curious for those who have dined at Cowfish, what exactly is the Cowfish sauce? Maybe I am not a good Googler but I couldn't find any description online.
