Epcot really does depend on your likes and "adventuresome-ness"
I have eaten at every place except the new Sunshine Seasons (but it looks GREAT!). You really won't go wrong. I would suggest against Lotus Blossum Cafe ONLY because most towns have Chinese take-out that is a little bit better. It is good, though. If you like Asian-inspired dishes, check out the Yakitori House. Tangerine Cafe is probably the most adventurous, but it is VERY good and arguably the most healthy option.
Something my family does is to stop by each place and get one or two small meals and share them. That way, everyone gets a little bit of everything, and you can experience different foods, possibly finding new favorites.
Our usual food itinerary:
1. Arrive early after a small breakfast (i.e. a pop tart or cereal bar).
2. Hit up FW East for the time between park open and WS open
3. Travel to Canada and UK. Grab an early lunch of the Patisserie and Tangerine Cafe.
4. Stop by Yakitori House after this.
5. See America, Italy.
6. Get a Pretzel and Brat in Germany.
7. See China.
8. Get School Bread in Norway and a Churro and Margarita in Mexico.
9. Hit up FW West, having dinner in The Land.
10. Evening snack back in the UK of Fish & Chips, and stake out a spot between UK and Canada to watch Illuminations.
