I am a paper and pencil kind of girl. I have never learned to use excel. (I am a nurse, so no need for it at work.)
I use graph paper and make a column for each day, using the front and back. I make a row for each park. That gives me about 4 rows and 4 columns on each side of my paper...making 16 squares. In each square I write the corresponding park hours for that day/park, along with parade and nighttime show times. I put an asterick next to EMHs. I then can glance at the day with all the park hours listed and choose where to go that day. I highlight that particular box. From there, I make meal ressies and fill those in with conf numbers, as well as any other ressies. Then I pencil in other activities such as puttputt or shopping at DTD. This keeps me organized and all the info I need is on one sheet of paper. Since I have all the park hours listed, if we decided to change our itinerary last minute one day, we would be able to look at the paper and choose where to go. I also have marked which parks are good with a little check mark or bad with an 'X' from touring plans.com
Sounds confusing, but it is easy, and I do it for every trip. Works great. Maybe one day I will get my DH to show me how to use excel.

HTH!
Just bumping your question b/c I would like to know also.
