Cornbread from scratch?

Does anyone havve a good recipe for cornbread? (the sort you cut into squares like you eat at Buffalo Bill's in DLRP). DS(8) loved it, so I promised him I'd make some.

The Parisian's seem a bit:snooty: about sharing their recipes, don't they :rolleyes1 I expect the Hooop de Doo is the most liekly - thanks!
 
I make the cornbread from the Wilderness Lodge all the time. I cook it in a cast iron skillet instead of a square pan. Very yummy! :thumbsup2
 
I make this one from p. 75 of the <><>The "Official" Disney Recipe Exchange<><> We love it! I usually cut it in half for my family of 4.

Hoop-Dee-Doo-Musical Revue Cornbread
Recipe serving size: A whole pan (We ain't fancy at the fort.)

3/4 cup cornmeal
1 1/4 cup granulated sugar
1 1/2 tsp salt
1 tbsp baking powder
1 3/4 cup all-purpose flour
1/2 cup vegetable oil
1 cup milk
2 eggs

1. blend flour, cornmeal, salt baking powder and sugar in a mixing bowl.

2. In a separate bowl, blend milk, eggs and oil with a hand-held mixer.

3. Using that same mixer, slowly add the blended liquid to the dry ingredients prepared in step 1, , mixing just enough to incorporate the wet and dry ingredients.

4. Spray a 9x13 inch cake pan with non-stick food spray, and pour the batter into the into the pan, spreading evenly.

5. Bake in a preheated oven at 375 degrees F for 20-25 minutes or until read is golden brown.

6. Allow to cool. Then cut, eat, sing and throw your hands in the air like you just don't care. (or just eat, your call)

Cornbread dries out more quickly than other baked goods - at least in my experience. We usually finish ours within 2 days, but have actually had it longer on occasions. I will put it in the refrigerator, though, if I'm keeping it more than overnight.

We I make "sweet corn cake" like they used to serve at Chi-Chi's I always put it in the refrigerator to store it. It's so much more dense & moist that it will go bad overnight...especially as I tend to make that when it's warmer out. (Taco night means I'm not in the kitchen as long. ;))
 
I might make a half-portion in a square pan - once I've got some more cornmeal!
