Ed is on a combination heart and Renal diet. Hospital food is awful so I want to make him stuff..The heart portioni is lowfat/low sodium... The renal part means limited dairy and limited potassium ..No tomato based sauces.. No whole gain bread, processed meats,no tomatoes(red) But he needs things high in protein.
He can't have much in the way of beans milk eggs etc, but a little is OK... Potatoes are OK if they are soaked for at least 2 hours to get rid of the potassium... SO..Does anyone have any ideas?. I cook a lot of mexican food so I'm going to make him shredded beef tacos with limited amounts of cheese..Italian beef is another good one for him.. I'm going to make him carne Asada with a mango salsa since he can't have any red tomatoes. Pasta is OK but it needs to come without tomato or cream/milk based sauces
