We are going to be spending a few nights at HH in March, and were planning on doing a fishing charter as well as fishing and crabbing at the resort. We got a studio this time, and I just realized we won't have a full kitchen. I believe on the fishing charter they will direct you to local restaurants that will cook up your catch for you, but do I have any options for anything we might catch at the resort? I seem to remember there being grills we could use to grill fish, but I'm not sure what we could do for any crab we catch?

You can use an "Instant Pot"

It's very easy, look at this video or google other receipes

We also hope to be able to cook fish and crab this October at HHI. We will be in a 2 bedroom and have a full kitchen but I wasn't sure what we would need to bring with or provide. What type of grills are at the resort and is there a pot large enough in the kitchens to boil crab?

We boiled crab and shrimp in our 2-BR in June. There was a large pot in the kitchen.
OP, I don't think I can help you out. We stay in studios when it's just the two of us, but we never fish while there. It's our DS22 and DS20 who catch our dinner, and when they are with us, we are in a 2-BR.

I thought we might be out of luck with the crab. Instant Pot would work great, but I don't think I want to lug that on the plane, lol. Hopefully we catch some fish and can make use of the grills!

It was super nice in Alaska to just have our salmon frozen and shipped home!

:-):-):-):-):-):-):-) Well, if there are cooking facilities? Yup, cook away :). It's gonna stink like HELL :).

My dear in-laws did this in a Monterrey rental, years ago. Management, and neighbors, nearly ran them out with torches and pitchforks :).
