I love stuff I can wrap in lettuce. Years ago my sister worked in this funky little Chinese restaurant in an old A&W building in Tacoma, and the lady there made the most unbelievable spring rolls. She was Chinese, but raised in Vietnam, so had this fusion thing going on. The spring rolls had a single whole shrimp in one end, and she served them with lettuce to wrap around them and nak mam sauce (which is among the worst smelling things in the world, but the trick is to eat it cold...while you can't smell it

) My sister took me down there years ago when I was (ahem...) hung over. I thought I was going to die. I swear those things cured me, and I was hooked forever. They are sooooo good. My friend Pete and I used to drive over there and buy dozens of frozen ones from her, and she would give us the sauce in big styrofoam coffee cups.

Sadly that restaurant isn't there anymore, and I've never found spring rolls that even came close anywhere else. Lettuce wraps are my poor substitute.
