We will be at Disney the week of April 15-22 and I was looking at hours. It shows the MK as having EH every day. We are staying off site so what time can we get in? (we try to avoid the park with EMH seems we cant this year)

You can enter the park at the listed opening time. WDW resort guests can enter an hour earlier.

it says 8am -12am so that means it opens for on site guest at 7am

Correct. The hours listed are regular park hours that anyone can go. The EMH hours start either before or after the listed hours.
