Confused about FP

We are planning a Disney trip for my daughter's birthday and I'm confused about the new FP system. I've been to Disney several times growing up and I remember just going in line for the rides,etc. From what I'm gathering you now have the option to schedule 3 attractions ahead of time and that's if you stay on a Disney resort? We are looking to rent a townhouse off site due to my sons severe food allergies (access to full kitchen) and because we aren't doing Disney everyday while down at Florida. Will we not be able to ride or go on anything if we do this? I would hate to waste thousands of dollars on a trip where we won't be able to enjoy the attractions. Any clarification or advice would be greatly appreciated! Thanks!

The FP+ system allows Disney resort guests to book 60 days in advance and off-site guests 30 days in advance. You can select 3 attractions per day and those attractions must be in the same park (for now as the Disney Blog is reporting possible upcoming changes involving more than 3 per day and the ability to book for more than one park). You will absolutely be able to ride whatever it is that you choose but I'd recommend researching crowd calendars (I like EasyWDW's) to minimize the amount of time you'll spent in queues. Josh breaks each day down with the predicted crowd level and which park is the best to visit.

Also, if you can plan to be there for rope drop, you will be able to ride more things as well
