Confused about 180 days

So can someone help me understand the exact day & time I should make our ADR's? Our family of 4 arrives on Nov 27. 180 days is May 31. So do I log online at midnight on May 30? Or is it 6 am on May 31? To call, I think it's 7am May 31? We are going at a very busy time & I'm already stressing we won't get the bulk of what we are looking for. So I don't want to worsen my situation by not taking advantage of the proper day & time. Thank you!

Of these, which do you think is the hard to get reservation and which should not be an issue?

Nov 28 Sanaa dinner
Nov 29 Les Chefs de France dinner
Nov 30 50's Prime Time dinner
Dec 1 8am breakfast at Crystal Palace
Dec 2 Mama Melrose dinner

You will be able to make your ADRs starting at 6am est on May 31 and the phone lines open at 7 am est. I would say the biggest priority as far as booking would be 'Ohana first then Crystal Palace. The others should be relatively easy to get.

FYI, the site may act up for a few minutes, if possible, have multiple devices ready to try and book. For me, it took about 30 minutes to book 10 days worth of ADRs. Make sure you have a CC on file as that will speed up the process.

Well overall, I'd say I had pretty good luck. Onlne was finicky so I reverted to the app on my phone & that worked lickety split! Much easier than the computer except when I had trouble getting an Epcot reservation. So Sunday November 29, every restaurant but 4 (2 of which were signatures) were completely booked for lunch & dinner. Ugh. Ended up taking Le Cellier, which we love, but hate because it's now 2 credits. So I took it to have something but will keep trying for Chefs de France. If anyone is cancelling a dinner reservation there for that day for a party of 4, PM me. It would be our first time trying it & our DD really wanted to go this trip. Also could not get Chef Mickey's for dinner Fri Nov 27. Took Tony's instead. But I'll keep trying for that too. Since we are staying at the Contemporary we've always had good luck calling from our room & getting right in. But it is a very busy day, so we shall see. Overall I'm pleased! Just thought I'd update everyone. Thank you for your help!
