we aren't booking any excursions, cabana (that might change in the next 30 days lol), childcare, or palo/remy

Is there anything else that shoreside concierge books?
For the character meet and greets that's done when we get on the ship correct?
 
Excursions (including a cabana) and adult dining are probably the biggest ones. Nursery care can be pre-booked. If you are interested in spa services, those can be pre-booked.

Shoreside concierge can help if you have any special requests -- dining time change or a requested rotation, request a specific server. Make sure allergies are noted. Special needs in the stateroom (need for extension cord for CPAP or something, etc.).

It probably doesn't hurt to let them know if you will be interested in tickets for meet & greets, signing up for mixology or such, but you are correct those things are handled onboard.

We stayed in concierge in January, and I requested Barq's root beer for my son. They had a case of the soda waiting for us in our room. Had some other family members that were not in concierge, and my daughters like caffeine free diet Coke. I hadn't asked about it ahead of time, but the concierge host was able to find the only case of that on board and got it for us.
 

You can only book 2 meals in Palo/Remy through shoreside. Any others you may want need to be done once you board.

1 X Remy Dinner 1 X Brunch
1x Palo Brunch 1 x Dinner.

Ask for others on the ship.
