Coming to the experts - cool things for a 5 yr old boy in Epcot?

Hi there! We've taken our now-five year old to WDW four times since his birth, and we're about to embark on our fifth trip with him in October. In past trips, we've pretty much stuck with the mainstream rides, fireworks, character greets, etc. Now that he's a bit more conscious, lol, we're trying to do cool off-the-beaten path and more interactive things - for example, in DHS, he's going to do the Jedi training. Is there anything similar in Epcot that we should try? It's been awhile since we've spent a lot of time in that park. Thanks in advance!
