I would like to try and make coconut eggs this weekend for easter. My grandmother used to make them and they were so good, unfortunately she passed away and no one knows the recipe. I prefer them to be a bit denser and not on the creamy side. TIA :thumbsup2

what you are thinking of....is it 'kinda' like an MOUNDS, but not as 'creamy'? I have a recipe for 'coconut balls' from my aunt that people go crazy for. It has something like, coconut, powder sugar, sweetened condensed milk, and butter in it. I can pull out the recipe if it sounds like something you might be interested in.

Is it actually a macaroon that she called a coconut "egg"?

This may be creamy.... not as 'moist' as a Mounds/Almond Joy, but not really flaky either. It seems super moist when you're trying to 'roll' it, but it doesn't seem like it once you bite into it. Here goes....

Coconut Balls
2 lbs coconut
2 lbs powdered sugar
2 cups slivered almonds (optional)
1 can Sweetened Condensed Milk
2 sticks butter (melted)
2 TBSP vanilla

Mix all the ingredients, then roll into balls, and dip in chocolate.

I have found its best to chill it for a couple hours before rolling, as it doesn't seem to stick to your hands as much. Then chill again before dipping.
