If you like characters, there are a bunch of characters that you'll find only at DHS.... Phineus & Ferb, Wreck-it-Ralph and Vanellope, Sorcerer Mickey, Mike & Sully, Mater & Lightning, Green Army Man, some of the Disney Jr Characters, and there is also Character-Poluza at Streets of America. IIRC it takes place approx 3 hours before the first Fantasmic if there are 2 that day. So if there's a 9pm & 10:30pm Fantasmic, then Character-Poluza is just after 6pm. There can be some less seen characters and it varies pretty much each day (examples include, but not guaranteed: Snow Queen, Meeko, Gepetto, Jafar and some of the regulars). There are usually about 5-7 characters that participate.
Shows... We love Beauty & the Beast and Lights, Motor, Action. Muppets is ok. Indiana Jones is fun. We're Star Wars fans so we always do Star Tours. Our next trip we're finally going to do Toy Story (missed it the last 2 trips).
Your dinner will be great... Mickey dressed as Jedi Mickey, Minnie dressed as Princess Leia, Donald as as Stormtrooper, Goofy as Darth Goofy all do trips to the tables. Chip & Dale as Ewoks will great you at the door for a picture before your seated.
If your DD doesn't like roller coasters, no big deal, DW & I take turns watching the kids and make sure I always do RnRC and she always does ToT. Sometimes we each get to do both rides.
Fantasmic is another great show. Jedi Training Academy is fun to watch.
Honey I Shrunk the Kids playground is just that. A playground. Bunch of slides and stuff to climb on and crawl over. When my kids were younger they loved it. Good place to for us to go so one of the adults could go on a ride and the other watch the kids.
