About how long of a wait on average for dinner if we are not staying on-site?
We will be there mid-August.

That depends almost entirely on the size of your party and what time you want to eat. Between 6:30-7:30pm you could be looking at a wait of up to 45 minutes; realistically to eat at main mealtimes I'd expect a 20 minute wait (less if you have a small party). We never waited for a seating over spring break last year.
 
We are there every july, but we never make ressies, we just turn up when we are ready to eat, if its to long await we move to another restaurant, as we enjoy all the ones we have been to, we always get one with no wait.If our stay was short , i would consider making a ressie
If there is a particular one you want to eat at, i would make a reservation at the Booth at Citywalk

With the crowds brought by Harry Potter still there in August, you should expect longer lines than in previous years and reservations would certainly be wise. You can make the reservations at the CityWalk kiosk across from the AMC theater as you enter CityWalk from the parking garage.
