We did this exact same thing when we were there last August dining with our then 6 month old. He had just fallen asleep in his stroller, and we let him know that we didn't want this dinner to take 2 hours. We ordered appetizers, entrees and desserts. We never waited more than 5 minutes between courses. We were out of there in less than an hour.
That was the best meal and the best service we had on the entire trip last summer.
Our thinking is that if we don't let the server know what we want, we certainly can't get upset or disappointed when things don't go our way.
