Cinnamon sugar almonds

Does anyone have a recipe that replicates the candied cinnamon sugar almonds from WDW? We had some from the cart near the Jungle Cruise and I've been trying a few recipes that say they're the WDW nut recipe, but something is missing....or I'm doing something wrong (which is a legit possibility!)

Speaking of candied nuts, does anyone know of any place in WDW that would sell pecans (prepared any way)?

My mom LOVES pecans, and thought that would be a nice small gift to bring back to her..

Not sure specifically about pecans, but my mom loves them too and she also loves gingerbread... I noticed that the concoctions you can have made at Goofy's Candy Co. in DTD has both on their "menu", so I was planning on having a gingerbread cookie made for her with pecans, white chocolate & caramel.

They are SOOOO good. They pale in comparison to the candied nuts that I've had anywhere else...and now, I'm on a mission to recreate them. However, it's getting expensive because I keep ruining batches! :laughing:
 
Here is the recipe that I have used, you may need to bake a little longer than it says. I have tried a few of the recipes on AllRecipes.com and this is the closest that I have come to it. If you like them a little more coated double the sugar and cinnamon.

INGREDIENTS (Nutrition)
1 egg white
1 teaspoon cold water
4 cups whole almonds
1/2 cup white sugar
1/4 teaspoon salt
1/2 teaspoon ground cinnamon


DIRECTIONS
Preheat oven to 250 degrees F (120 degrees C). Lightly grease a 10x15 inch jellyroll pan.
Lightly beat the egg white; add water, and beat until frothy but not stiff. Add the nuts, and stir until well coated. Mix the sugar, salt, and cinnamon, and sprinkle over the nuts. Toss to coat, and spread evenly on the prepared pan.
Bake for 1 hour in the preheated oven, stirring occasionally, until golden. Allow to cool, then store nuts in airtight containers.
 
these are my favorite snack @ disney world!! i always get them @ DHS on the streets of america. i would love to have the recipe too. i get these @ universal studios too.

I love these too, and have had them other places, like amusement parks and so forth. However, I think they would be pretty difficult to replicate because no matter where I have had them, the process is always the same: there is a round metal pan, with a rotating arm that keeps moving the nuts and the coating. In fact, when we were in Epcot the first week of October, I wanted some of these, and the guy at the stand said they weren't ready yet. While we were still at the kiosk, another CM showed up bring supplies, and I overheard the people working at the kiosk asked her if she knew how to fix that batch of nuts because they had ruinded them.

Seems like a pretty specific process.

:scared: Oh please don't say that! There's gotta be a way! Next September is a looonnnnggg way away....:sad2:

Thank you for this! I have tried a recipe very similar to this and it ended up very foamy/frothy. Maybe I mixed it too long? Or didn't stir it enough...your version is different in how the ingreadients are combined, so I'll have to try it! :goodvibes
