Christmas/snowed in menu?

We are planning have a variety of dips for Christmas. Tortilla chips with salsa/queso, veggies with ranch/hummus, shrimp with cocktail sauce, various things with marinara sauce (cheese sticks, bread sticks, whatever), you know that type of stuff.

But with the storm coming, I will be stocking up tomorrow for the next several days. It's only my husband and my 2 kids will be home from college, so not a lot of people. But I need to make sure we have plenty of food and it can't all be junk food. Hmmmmm, what to make? What to have on hand?
 
Do you need to be concerned that the power could go out? That could make a difference in your choices.

The last snowstorm I went through, before we moved south, our power was off for a day or two, but we had a gas stove so we could cook. We had a big pot of chili and some cornbread, and a big pot of hot chocolate.

Snowed in for me means meals that can be stretched into two meals back when I was shoveling.
Store bought roast chicken for lunch or dinner putting the bones and such aside for comfort food chicken soup - cook with carrot peel, celery ends and leaves plus the bones then strain add nice veggies, tortellini is a nice way to make it heavier - sometimes I add a container of broth.
Spaghetti with the sauce for a meal, add 1-2 whipped eggs, ricotta and parmesan the next day for comfort food spaghetti pie which is basically baked ziti with a different pasta.
Roast beef if it is on sale for a main meal then the leftovers are fantastic with nice crust bread that I make into cheesy garlic bread roast beef sandwiches.
 

I like to make a big pot of soup and a pan of enchiladas. Quick to heat up in microwave or stove. Also, we have plenty of fruit.

Yeah, I love to stay in that situation for holidays.

I told my spouse after today, we aren't shopping til Monday, so we're gonna make do.
 
I have everything to make our own pizzas on FRI - 3 large
we should still make it to my cousins on SAT- 10 miles away
Sun is an uncured peppered ham, cheesy hashbrown casserole, green beans and sweet potato/baked apples. Plus we have cookies and a banana cream pie. There is plenty of other things that can be made as long as we have power. Thankfully we do have a pretty good size generator, which we always pray we won't be using!
I went grocery shopping today, 2 days sooner than I expected.
 
Yikes, between it almost being Christmas and the approaching storm, I would think the store will be a zoo tomorrow.
 
Last weekend when we had girls home with boyfriends, I made a pot of chili and one of baked potato soup. I had also made us a roast the day before so I could make beef and noodles if necessary for after Grandma's house. This weekend may have one girl home with boyfriend, so I'm planning on a ham and twice baked potatoes, and lasagna. Possibly sliders.

I went yesterday, it was really busy. Had to go past a Target plaza this evening, the parking lot was fuller than I have ever seen it. Tomorrow is supposed to rain, I know it will be an absolute madhouse. I was supposed to get bakery rolls, bread for dip & salad mix on Christmas Eve morning. I’m gonna run tomorrow morning instead since Christmas Eve is supposed to be blizzard conditions. Not looking forward to it.

Us too, although we're pretty concerned about power outages which really complicates things. As long as you have power, I'd just go along as normal. What would you normally make for Christmas etc?

Same. I made sure to get enough stuff to get us through to the 26th. We aren't going to get the bitter cold and snow like most of the US, but we will get pretty chilly for Florida! I do have to go shopping on Monday, to pick up 2 weeks worth of stuff for my 19 y.o., who is staying home and catsitting while DH and I go see the grandkids. He doesn't drive yet (anxiety)

We went to both Target and Walmart Neighborhood Market about Noon time today. Only 1 person in front of us at Target at the self check, and only two ahead of us at Walmart. I was surprised. But we don't have any weather events coming here, just Christmas.
 
We have the same family dynamic, us 2 and 2 college aged "kids". We bought a small rib roast and I will make that along with my Polish kapusta(sour kraut) and my oldest requested deviled eggs. Probably have some kind of potato with it also. I made chili today and that will last a couple of days. We also have the typical snacks like beef sticks, cheese, chips, fruit, etc. I have enough ingredients to make a ramen soup anytime that I want also.

It is horrible. We are supposed to get wind chills as low as -30 to -40. Thankfully, none of us have to go out since we all are off of work until next week.
 
If you are worried about the power going out, I'd stock up on sandwich makings. Deli cold cuts and cheese will be fine if there's no electricity; just put them in a cooler and stick it on your back porch or someplace cold; if you have frozen chill-paks or some ice, put that in there too. Have plenty of crunchables- chips, tortilla chips, etc.- on hand, and maybe some cut celery and baby carrots (which will also be fine, kept in a cooler). We lived on sandwiches (DH called them deck-wiches, as the coolers were on the deck) one October when an unexpected storm knocked out our power for a week!

I have a DD in Nebraska, and she said it was =11 this morning; feels like -36. 🥶:cold: DGS#3's elementary school is out for winter break, but both daycares for both boys were closed starting Monday, due to the weather. Luckily she can work from home (she's been doing it that way since 2020), so they are all tucked in at home. She stocked up on groceries a couple days ago. They are supposed to go to SonIL's parents house on the 25th (which is where the big fat jolly guy in red brings their gifts) but don't know if they are going to be able to go!

I have a nephew who drives for DHL in South Dakota, and said last night that his boss said they had to work regardless of the temp; that the trucks are winterized for that kind of weather. :worried:


I need everything getting back to normal on Monday, because I need this vacation, lol. I haven't seen DD#1's oldest since he was a year old (5 years ago) and I've never met the baby (15 months)...we have had multiple vacations planned/paid for/cancelled, but with Covid and DH being a transplant patient, we have had to be very cautious. It's only been the last 6 months that we've felt safe enough to travel, and getting a date set that works for everyone has been a mess.


ETA and i just realized I never answered the OPs question!

For a snowed in dining plan, I'd have things like sandwiches, fresh fruit and veg, ramen cups, dips, etc. Things I could live on without power. I'd probably make a big batch of chili and one soup of some sort, and put them in individual portions in the freezer. We have a big 3 burner camping stove, two 2 burner tabletop camping stoves, and two single person backpacking stoves, that all use propane or some other type of heating element, that we could use to heat or cook with (but have to be used outside, so I would avoid having to do actual cooking, lol).

Over the past week we've bought so much food I think we'd could go for several weeks with what we have on hand. Premium cuts of meat, veggies, frozen entrees, sandwich makings, snacks/appetizers. DD spent several hundred dollars at the liquor store so there is all manner of beverages here too. I think we may be the reason the terrorists hate us.;)
