Christmas Breakfast

The entire breakfast centers around Neuskue's Applesmoked bacon...the best bacon on earth!!!! Maybe a few eggs, hashbrowns, sweet rolls..

We're not big breakfast people. I've been making these for the last few years and now DS16 thinks it's a tradition. :laughing: They're really easy and make the house smell good.

This is usually what we do too, but last year I made monkey bread and that was a big hit too. Not sure what I'll do this year.

Sure!

Throw one bag of hash browns (I semi-thaw them first) in Crock Pot, add a dozen eggs (whisked), mix those together slightly, add pack of bacon cut up (cooked... I use ready to serve because it's easier, and tastes the same in this application), a diced large green pepper, and a small chopped onion. Mix together. Add pack sharp shredded cheese. Mix again slightly. Cook overnight on high 10-12 hours, or until eggs cooked.

This sounds really good too---and easy!! Maybe this AND the french toast AND the Monkey Bread :thumbsup2 If we had all of this, we could eat dinner later.:lmao:
 

Haven't decided yet. It's a toss up between a breakfast casserole or pancakes with the usual cast of side dishes. We'll eat breakfast then watch the Disney Christmas Parade on TV :thumbsup2

Fried eggs ( sometimes cooked in the bacon grease/oil...I know, not at all healty) :eek: LOL
Homemade home fries
corned beef hash
toasted english muffins
orange juice
possibly pancakes or french toast

Then, afterwards we all need to either work out or unwrap gifts with extreme vigor after a breakfast like that!!!
 
I've loved reading this thread!!! We've never been really into "Christmas Breakfast" before. Usually while we're cleaning up the wrapping paper mess, the boys would just go get themselves a bowl of cereal. BUT I'm really loving the idea of having a little spread for us to nibble on that morning.

Usually on the weekends my hubby will make himself & my youngest son some eggs/toast with bacon sometimes. My oldest doesn't really care for an egg breakfast so he usually has his cereal. Me? I have to be in the mood for eggs.

On the other hand, I'm thinking I might pick up some OJ, fruit salad, cinnamon rolls and make some blueberry muffins. Never made any of the breakfast casseroles (and not sure how the hubby & the kids would like it, although I know I would lol) and since we're eating dinner at noon, I wouldn't want anything too heavy. But they all sound delish!!!
 
Our Christmas morning menu

OJ/Coffee/hot chocolate
Fruit tray
Kringle (ordered from our favorite Danish bakery in Racine WI)
Egg/Sausage Casserole (prepared the day before)
Oven Baked French Toast (prepared the day before)
Bacon (cooked the day before)
Hash Browns

I ususally fry the hash browns in the morning but this year I am trying this recipe.


Parmesan Hash Brown Cups

Servings: makes 12

Ingredients

•1 (20 oz) bag Simply Potatoes Shredded Hash Browns; OR 3-1/2 cups shredded russet potatoes, rinsed and squeezed dry in a towel
•3 green onions, chopped (approx. 1/3 cup), both white and green parts
•1/2 cup grated Parmesan cheese
•1 teaspoon kosher salt
•1/2 teaspoon black pepper
•2 tablespoon olive oil

Directions

Preheat oven to 350 degrees. Coat 12 muffin tins with cooking spray; set aside. In large bowl, combine potatoes, onions, cheese, salt, and pepper. Toss lightly with a fork. Drizzle on olive oil. Toss with fork again until mixture is well combined. Spoon mixture evenly into 12 muffin cups. With the back of the spoon, apply gentle pressure to pack mixture into each cup. Bake for 60-75 minutes in lower third of oven. Let rest for 5 minutes, run a small knife or spatula around the edge of each cup, making sure the edges are loosened. Gently lift each potato cup out, invert it, place on serving plate bottom side up. Good served warm or room temperature.

MAKE AHEAD FOR COOKING LATER: Combine mixture, spoon it into muffin tins, cover with plastic wrap, and refrigerate until ready to bake. Remove from fridge 30 minutes before baking time. May be made the night before to cook and serve for breakfast the next day.

MAKE AND COOK AHEAD FOR REHEATING LATER: These are best when eaten freshly baked. However, they can be baked ahead of time, refrigerated or frozen, and reheated before serving. They lose some of their crispiness when reheated, but the texture and taste is still good.

FOR BITE-SIZE TATER TOTS - make them in mini muffin pans.

SERVING SIZE = 1-2 hash brown cups per person
1 hash brown cup = 2 Weight Watchers PointsPlus
 
You know how with kids you do something once then it's TRADITION?? :lmao: Well our Christmas brunch hasn't varied for 25 years or so! When we started my little sister was a teen and still living at home...now she comes with her husband and her four teen girls! Mom is still with us so she also comes, along with DD and her DH, DD and her BF, and DS, so 15 people. Here's what we serve:

Champagne cocktail (sparkling apple for the underaged)

Huge fruit salad that DH chops up the night before

Egg casserole (sausage, eggs, cheese, crescent roll base)
French toast casserole
Creamed chipped beef (major ick for me but the others scarf it down!)
Potato casserole (hash browns)
Sausage links
Bacon
Grands biscuits (for the beef)
Texas toast or English muffins or mini bagels

Homemade cinnamon/pecan rolls (used to do it from scratch, then I found it was easier and less time-consuming to use frozen bread dough)

I do as much as possible the day before, then throw the rest together in the morning. It's a favorite tradition for all of us!

Are you sure that's cooked on "High"? If I cooked something on high in one of my crocks for 10-12 hours, it would not be edible! Well, maybe the middle would be, but definitely not the edges. Looks like a great recipe other wise, though! Thanks, I will make this next time we have a group staying at the cabin for sure.
 
We always have cinnamon rolls, bacon, and any desserts left over from Christmas Eve (pie, fudge, cookies, etc). Yes, I have been known to have apple pie a la mode for breakfast. The kids LOVE having these normally forbidden items for breakfast.
 
I found the recipe for Memere's French Toast from Port Orleans so I will make it for my husband. That is one of his favorite breakfasts while I am having an egg white scramble with some turkey sausage.

I had my friend for breakfast the other day and made this casserole for the first time, it was delicious! I still have ingedients left so I am going to make a another one for Christmas, so will offer the breakfast sandwiches, the casserole...or both! ;) Merry Christmas everyone! :santa:

Jewish Christmas here, too. Bagels, lox, whitefish, pickled herring and a noodle kugel. Cannot wait!:banana:
 
I make a Breakfast Crock Pot Casserole. It ends up like a quiche, with eggs, hash browns, bacon, green pepper, onion, and lots of cheese. It cooks overnight and is ready in the AM!

I think this sounds wonderful., especially since the oven has been acting up (so baked goods are problematic), but I might make it in a slightly smaller version since we only have three people in my family. AKL Megs, have you ever made it with *less* than a dozen eggs/pack of bacon/etc.?
