Chili's fresh seasonal vegetables

I love the vegetables that come on Chili's guiltless chicken platter.

Anyone know how to recreate this at home?
What kind of spices, etc? I'm pretty sure it's a grated parmesean cheese on there as well.

As far as I can tell, Chili's veggies are steamed and they add some kind of seasoning, like a seasoned salt. They also put a little shredded parmesean cheese over the top.

Have you tried roasted veggies? I like to put them in a baking pan with some cooking spray, sprinkle with garlic powder and seasoned salt and roast at 450 degrees. It only takes about 10-12 minutes. I take them out when they're starting to get brown on the edges.

Oh that sounds good. I will definately have to try that. Have had roasted carrots from a local place and they were good.......got them in a to-go order so I bet they were better right out of the oven. :goodvibes

Actually, my favorite thing to eat at the momemt is broiled spinach. I put a lot of it on a baking sheet, drizzle it with a tiny bit of olive oil and a little salt and broil it until it is wilted. It keeps a better texture in the oven than on the stove for some reason. We eat it as a side or I mix it in with pasta and top with marinara sauce. None of us used to like spinach at all, but we eat it this way after having it in a restaurant.
 

wow, the spinach sounds good! I rarely use my broiler, I have a hi and lo setting for it. which should I use? about how long do you broil it for?

I have never thought to broil spinach but that sounds great. I love spinach raw but never really liked it boiled because of the texture. I'll try it your way.

I like raw spinach but don't like it cooked b/c it's bitter when it's cooked, is it less bitter cooked this way? BTW That's the same method I use for roasted asparagus with the addition of pepper.

I only have one setting, so no advice there. I put the spinach quite close and really watch it as it cooks quickly.

I have to move it around once or twice to get it too cook evenly, but it takes less than 5 minutes.

It comes out soft, but not mushy with a few crisper, slightly browned leaves.

ETA, it isn't bitter at all this way.

ok so I have a stupid question - are these fresh or would frozen work also?
 
I have a friend who works for Chili's and we're going there for lunch today I'll see if I can find out what the spices are.

I'll have to try the spinach too. Trying to get into the habit of eating more fresh veggies. DH's blood pressure has been slightly elevated and I'm concerned it's all the sodium we get in the processed foods.
