Chili recipie

Anyone have a good recipe for Ohio/Cincinnati chili? Or something like that? Around us, Hard Times Cafe makes exactly what I want, but I can't replicate it. My Brother-in-law also makes an incredible recipe that he "can't write down, can only make it and we can't watch." It's more runny than thick, NOT SPICY (but you can add peppers if you want!), NO BEANS (you can add them if you want), etc... I am desperate to make it at home!
 
I will only use this recipe when making chili. It is supposed to be the recipe Steak and Shake uses for their chili, but DH got some S&S chili just to compare and he didn't think it tasted similar. But he and everyone we have made it for thinks it is the best chili they have ever had. We had a chili dinner at our church and used this recipe. Some people looked at me weird due to a couple of the ingredients, but it went over extremely well. I had many, many people tell me it was the best chili they had ever had. And not that I am a bad cook, I just usually don't get a lot of compliments like that! LOL! Here is the link:

I got this recipe off this board a while ago and made it today, it is REALLY GOOD. I will definitely make it again. I only wish I could find the thread I found it on to thank the person for posting it and to give her credit. The only thing I did differently was I browned the meat and onions in a pan then threw everything in the crockpot on high for 4hrs. and I used 2 cans kidney (1 light and I dark) beans. Anyway here is word for word from her post:

"The cook cookbook says that this is from the Campfire Snack Bar at Fort Wilderness and the Fiesta Fun Center Snack Bar at the Contemporary."

2 pounds ground beef
2 1/4 cup chopped onions
1/2 t. granulated garlic
2 t. chili powder
1/4 t. ground cumin
1 1/4 T. salt
1 T. paprika
2 cups of catsup
3 cups tomato puree (1 - 29 oz can)
3 1/2 cups beef stock
2 cans pinto or kidney beans (I use Bush's Hot Chili Beans)
1 cup dried bread crumbs

Saute beef and onions until meat is lightly browned. Add all the spices, catsup, puree and beef stock. Mix well. Bring to a boil and simmer over low heat, stirring occasionally for about an hour. Add undrained beans and bring to a boil again. Add bread crumbs and remove from heat. This recipe freezes fabulously.

I actually just made it again today for a party. After the party, my DH said, "Maybe we should open a chili stand since everyone loves your chili" I told him that I don't think my chili (which is really Disney's chili) could pay our bills!

Anyway... It is a FABULOUS recipe and everyone LOVES it!

Edited to add - I often (like today) actually double this recipe. It makes a TON so I always freeze about 1/2 of it.
 

Chili Soup

Yummy, hot and spicy great for those cold winter nights!

Ingredients

* 1 and ½ lbs minced beef
* 2 onions
* 2 cans kidney beans
* 2 cans plum toms
* 1 potato
* 2 teaspoon chili powder
* 1 tablespoon tomato puree
* 4 cups cup
* good dash beef stock (bottled from supermarket!)
* 1 cup tomato juice
* good pinch to taste sea salt (maldon if possible)

Method

* In a large pot over medium heat, combine the mince beef and onions. Saute for 5 minutes, or until meat is browned. Drain excess fat and add the potatoes, beans, tomatoes, chili powder, water, juice and salt to taste. Bring just to a boil and reduce heat to low. Simmer for 1 hour and serve with grated cheese and sour cream if liked. Freeze any left over.
