Chicken?

I have ground chicken destined to be meatballs in my fridge right now!

We tend to have chicken breast at least once a week, and wings when DH gets inspired to make them.
 
Right now a local supermarket has a special on frozen leg and thigh quarter at $5 for a 10 lb bag. I've bought similar before, and some of it is added water, so it loses some weight. I know factory farmed chicken isn't that great, but at least leg and thigh has more chicken flavor than that sad excuse that's called chicken breast meat these days.
 
I don't see any in the freezer, which is amazing because it is my wife's favorite protein.
I got burned out on chicken during the 1973 Beef boycott. My mom went way overboard with chicken. Although some of the meatless recipes she tried were great. I had never had eggplant before then, and it is pretty tasty.
To be honest, I think now the issue with chicken is how it is prepared. Deep fried where the chicken is tender and juicy is best.

My wife cooked chicken all the time. She didn't like pork chops so we never had those. We ate a lot of ground beef obviously. However she cooked boneless skinless breast very poorly. She never planned and took them out frozen and threw them in a cold pan on the stovetop or in a pan in the oven with sauce. So it was always rubbery and flavorless. I'm way burned out on chicken.

It's more work to cook a chicken dish that is good over any other meat. Steaks, SPG and toss on the grill. Chops are great with just a coating of a good seasoning, McCormick Roasted Garlic and Herb being my current go-to. You can't just season up a chicken breast and toss it on the grill, it will cook terrible.

One of my favorite dishes of all however is Chicken Marsala, the Italian dish not the I think Indian Chicken Masala. It's a lot more work than just tossing a piece of meat on the grill, my preferred method of cooking.

LOL. I love grilled chicken with BBQ sauce, I will eat that.
Chicken Marsala, well, that is my wife's default method of fixing chicken, just not a fan.
