Chicken?

having 'dungeons and dragons chicken' tonight (my son got a d&d cookbook awhile back-some pretty good recipes).
I'm going to have to look for this. My daughter is the president of her college's D&D club and my youngest son has been playing since he was 12. They both love anything D&D.

Also we had chicken, broccoli and rice casserole tonight, one of the only casseroles I make.

I was at a local supermarket and it was the first time I'd ever seen whole chicken. It had its feathers removed, and was gutted (don't know if there were giblets). However, it had its head and feet intact like chickens sold in Chinatown.

The label said "HOFO CHICKEN" whatever that is. I've heard of my Chinese friends talking about "yellow skin" chicken, although I think this wasn't quite that. I'm pretty sure it was an Asian style heritage chicken that was around because it was Chinese New Year. It didn't have massive drumsticks and huge breast meat. I think this was the way that chicken was meant to be and not the rather sad looking (pretty nasty looking when alive), flavorless, factory farmed white broilers that most people accept as "chicken" these days.

Can't afford a fresh "whole" fryer/broiler.
What was $5.50 pre-pandemic is now $11.00!
For a little 5 lb. chicken!

So, I buy frozen chicken from Aldi: thighs & breasts.

head on/feet on. btw-BEST EVER chicken soup i've had in my life was made using feet to make the stock.

Just wanted to clarify that I’ve seen whole head and feet chicken before, but I’ve never seen one at a regular supermarket in the United States or Canada. I’ve vacationed overseas and seen them sold at a Wal-Mart. Or at a typical Asian supermarket like 99 Ranch, as well as a Chinatown.

But yeah there’s something to be said for having all of it. Still, my Chinese friends have had me over and they usually cut off the head and don’t use it. But the neck certainly adds flavor. The typical American style “whole” chicken is missing the head, neck, and feet.

I have 2 thighs left and a package of tenders. I don't eat chicken much. Always skinless boneless chicken breast when I was married and I am not a fan of that. Too difficult to cook as you have to doctor it all up plus be perfect in getting it off the heat to rest and come to a perfect temperature so it's not undercooked or dry as the desert.

I do have chicken wings, but those are just carrier for what is actually for dinner, Redhot and butter, lol.

I have a lot of it in the freezer. It's my favorite meat. Haven't noticed any shortages in the stores here, though the price has gone up quite a bit. We just had boneless thighs for dinner last night.

We have some version of chicken a few times per week usually. Which reminds me - I have a trip to Sams or Costco in my immediate future to pick up wings for the Superbowl.

We've had no issues here with chicken supply, or eggs. We have it at least twice a week, and still get the roasted chicken at BJs for under $5.
People seem to love Costco and Sam's Club, I have multiples of of each in my area but I prefer BJs. I think their prices are better and way less crowds. So far they are limited eggs to only two packages and various other things throughout the store but they haven't been out of anything I've needed. And yes the roasted chicken is still $4.99, great deal for an easy dinner.

I brought home take-out fried chicken last night and proceeded to regret it immensely. I’ve got GI issues that make eating anything deep fried a very, very bad idea. I know this - yet I still do it every couple of months with the same predictable results. I was literally feeling so nauseous at the time that I couldn’t even read this thread without gagging and I definitely didn’t have a very fun night.

It's too difficult. I have a doctor's appointment on Monday. I am pre-diabetic. Nothing has changed over my entire life other than going to the doctor and her seeing the number. Been doing real well with eating, well not properly but at least eating real actual food over processed and junk food.

So someone brought donuts in yesterday, "have a donut!" Nope, I'm not going to.

3 donuts later by afternoon....

Costco had a pretty good sale on their large (10 lb.) bag of frozen wings this week.

i'm a fan of costco but their meat prices have been much higher than the grocery sales for several years around us. right now i can get boneless/skinless breasts or thighs on sale for $1.79 a pound at one of the local stores-costco charges MUCH more.
