Chicken help please

OK, this is going to sound really stupid but how do you cook chicken leg quarters??? I usually cook boneless breasts, or chicken in a box LOL, but I have no idea how to cook these. My son loves roasted chicken, and these are so cheap that I thought I'd give it a try, but somebody help me please!!!

I just season them the same way I would a whole chicken & bake or grill them. Years ago I used to do them in the crockpot, but I found the bones tend to disintegrate. They get so soft that it's difficult to get them out of the meat.
 
I sometimes separate them into a thigh and leg, then use the bisquick recipe for oven fried chicken. Other times I marinate them and grill them.

Another thing I do with them is to bone and skin them then use the meat for stir-fry. Keep the bones for stock.

Found a recipe for you which seems yummy. I must say I have not tried it though.

"Chicken leg quarters baked with rice in a creamy broccoli mixture. I dislike most convenience food recipes, but I feel that this one's a winner, as it's not only fast but healthy too! winner, as it's fast, but also healthy."
Yields 4 servings.


Prep Time: 10 Minutes
Cook Time: 1 Hour 30 Minutes
Ready In: 1 Hour 40 Minutes


4 chicken leg quarters
1 (4.5 ounce) package instant long grain and wild rice
2 cups water
1 (10.75 ounce) can condensed cream of chicken soup
1 (8 ounce) container sour cream
2 cloves garlic, crushed
1 tablespoon minced garlic
1 cup chopped broccoli




1 Preheat oven to 350 degrees F (175 degrees C).
2 Place chicken quarters in a 9x13 inch baking dish and bake in preheated oven, covered, for 45 minutes.
3 Meanwhile, in a large bowl combine rice and seasoning packages, water, soup, sour cream, crushed garlic, minced garlic and broccoli. Mix well.
4 Remove chicken to a platter and drain oil. Spread rice mixture in the bottom of the baking dish, then arrange chicken on top of rice. Bake uncovered for 30 to 45 minutes, or until wild rice is opened up and liquid is absorbed.

I also sometimes buy the leg/thigh quarters when they're on sale. Usually I just use Shake 'n Bake. :eek:
