Ok, so we were going to eat out tonight BUT with all the snow & sleet we're getting we aren't.....all I have at home is chicken breast......Does anyone have a recipe??? I'm really tired of just baking them or b-b-qing them.

its probably a bit late now but if you still want one:

Pippin chicken

4 x chicken breasts
1 onion (finely chopped)
sliced mushrooms (optional)
15 fl oz milk
4 fl oz apple juice
1 stock cube, crumbled ( or 2 t stock granules)
2 T cornflour
2 t dried herbs.

Brown the chicken lightly in a large saute pan in a little butter with the onion, add the mushrooms (if using) and soften slightly. Mix the cornflour with the milk and add to the chicken with the herbs and stock cube, stir well and bring to the boil, stirring, until thickened. Stir in apple juice, reduce heat cover and cook for 20-25 mins, stirring occasionally and turning the chicken half-way, until the chicken is cooked right through. Serve with potato or noodles.
 

I make a mixture of 4 Tablespoons Ranch dressing, 2 Tablespoons melted butter, and a sprinkling of parmesan cheese, salt & pepper & slather it on the chicken. Let marinate for a min of 10 minutes & then bake or broil at 400 degree for about 20 minutes. Very easy & tasty. :)
