Chef Mickey's Potato Salad

I have looked everywhere, and I can not find a recipe for the potato salad from Chef Mickey's. Does anyone have it or know where I can get it. I would love to make it for Independence Day!

I check the list at allearsnet and sadly, they don't have a recipe for that.

It took nearlt three months, but I finally got the recipe from Disney!!!!

Here it is if you're interested.


POTATOE SALAD
Chef Mickey's

12 ½ Pounds Red Skin Potatoes, Cut in 1/4
11 EA. Hard Boiled Eggs, Chopped
6 OZ. Celery
6 OZ. Onion
.75 OZ. Lemon Juice
1TSP. Parsley
1/3 Pound Mustard
4 Pound Mayonnaise
Salt & Pepper To Taste

1. Steam Potatoes about 12 Minutes, or until tender. Chill to 40 degrees.
2. Mix Together all ingredients instead of Chopped Eggs.
3. Toss potatoes and dressing together. Add Chopped Eggs.
4. Season with Salt & Pepper To Taste.

I've never eaten at Chef Mickey's, but that recipe does sound YUMMY!
