One of the things we like to do when eating at a TS and not on a
DDP is share a meal (just like at home). This can really cut your meal costs down. Obviously you can't share at buffets but you can at most other places. (I haven't been to one yet at WDW that you can't-except buffets). You can also opt for an appetizer to eat as your meal instead of an entree.
Some of our fav. TS choices (and reasonably priced, for WDW) would be Kona Cafe (yummy sticky wings-so shareable too), Raglan Road, and Wolfgang Puck Cafe.
Also there are several CS locations that are a great value too and don't seem like fast food. Two in particular are Wolfgang Puck Express (Marketplace) in DTD and Contempo Cafe in the Contemporary. At WPE they even deliver to your table.

We tend not to do many TS meals in the parks. Since we have our own (rental) car we tend to go to resorts and/or DTD.
If you are MK however you can jump on the monorail to go to GF, Contemp, or Poly.
I like Teppan Edo, Tokyo Dining, and Tutto Italia in Epcot but I wouldn't call them a great value.
We do share meals at 50's PTC and find that the pot roast and fried chicken are totally shareable.
MK-Sorry, no TS value suggestion here though we have liked Liberty Tree Tavern in the past but haven't been back since the characters left.
