I'm always looking for lunch ideas for the kids, but now I'm looking for me. Both kids start school tomorrow. I'll be left at home to fend for myself.
I work from home. I've been trying to find lunch ideas for myself, but so far have only brought home the frozen, processed kind of lunches (enchaladas, chicken kiev, eggs rolls, even some Weight Watcher meals like lasagna) but they are not cheap, by any means.
Has anyone tried to make a pan of something then freeze it in individual servings? I've done this when we make homemade eggrolls and it works pretty good. If I can make my own frozen "processed" foods at least I can control what's in it and how much I spend better. Soup and sandwiches will get boring pretty quickly! Maybe I need to work on leftovers more, even make extra at dinner to supply my lunch the next day. Hmmm...I'm giving myself some ideas!
