Cheap, easy Crock Pot ideas.

Can't wait to try some of these! Our favorites are the Italian beef with pepperoncini's (sp) that someone posted, have made it for years, and this roast:

1 package brown gravy mix
1 package Ranch dressing or dip mix
1 package Italian dressing mix

Mix dry ingredients together. Pour 1/2 cup water over a 3-4 pound roast in the crock pot, then sprinkle with the dry mixes. Cook on low 8 hours or so.

Sounds weird, I almost did not try it, but our whole family loves it. We usually do a 2 pound roast for our family and I will just use half of the dry mixes and save the rest in a container for next time. I also throw in some potatoes and carrots about 2 hours before we are ready to eat.

Also good on a pork roast, just substitute pork gravy mix for the brown gravy. Definitely not for anyone watching their sodium!!!;)
 
Santa Fe Chicken

Combine the following in your crockpot:

1 can black beans, drained
1 can corn
1/2 cup salsa

After stirring, add:
4 boneless, skinless chicken breasts
1/2 cup more salsa

Cook on low for 3 hours. Then add,

1 block of cream cheese

Cook one more hour. Serve over rice with flour tortillas.


really dumb question, but do you drain and rinse the beans and do you rinse the corn? This sounds like something good to make for DH's work party

I did... I had it last night and again as leftovers tonight... it was even better today.
 

Does the meatloaf get greasy?

I found it too greasy for our liking so I scrunch up foil and put on the bottom first, then fold foil into strips on put up the sides so you can lift out the meatloaf. I add carrots and potatoes at the bottom and around the sides.
 
Question, I go to work at 8 am. I won't be home until after 6pm. Will I be okay leaving the crock pot going all day without me around? Will it be okay if it cooks longer than 8 hours on low temp?

I think this depends....I have an older crockpot that I trust to stay on all day, but my new stainless crockpot gets too hot. It burns everything on high and has to be watched on low. I wouldn't leave it until you are familiar with your particular crockpot. They all have their own "personality":confused:

Carmalized Cherry Pork Chops
4-6 pork chops
1 16oz can of cherry pie filling
dash of nutmeg

open can and dash in nutmeg to taste. place 1/3 of can in crock pot, add pork chops top with 1/3 can. cook on low for 6 hours, add 1/4 cup of water for each additional hour. Before serving, heat last 1/3 can on stove in pot, spoon over pork chops.

The best thing about this is you can do chicken instead of pork and also use any kind of fruit pie filling. It tastes like you spent hours slaving over the stove...:happytv: if they only knew;)

It's very interesting because my mom actually bought me a new slow-cooker for Christmas that I LOVE! I've done chicken, beef, meatloaf, stew, bbq chicken, veggies and potato soup.

I do have to cook on low while I'm at work. During after-Christmas sales shopping I tried cooking on high. I was gone 2 hours and my poor meat looked a little crispy. Now I know to only cook on high if I plan to be home and am able to stir things up. Also, I don't use as much liquid as I did in the crockpot. So when I get home I add more beef or chicken broth to make a nice sauce after I pull out the beef or chicken pieces.

I haven't really used any recipes except when I did the potato soup (the one that was posted on here for New Years..MMmmmMMmm good!) and the matloaf (since I have never made it...personally I don't care for it but DH loves it). With the meatloaf, I placed potatoes cut in half on the bottom for the fat to drain off. Then I mashed them up. I used lean meat so there was only a little grease, and that added enough flavor to the potatoes.
I just throw things in the pot and come home to dinner! Like right now, I have onions (sliced) with potatoes (see a theme with DH and I?? :) ) with beef tips. Add some A-1 and presto, dinner is served!
This is a geat way to get DH to eat his veggies as well. I love mixing green beans and red potatoes together with some fresh garlic.
 
I have rediscovered my crock pot in the past few months. I have tried numerous recipes. I noticed no one had mentioned any desserts...so, all you chocoholics out there, try this one! Choc, fudgy cake with gewwy hot fudge sauce either around it or underneath! YUMMMMM.

HOT FUDGE CAKE
1 cup packed brown sugar
1 cup flour
1/4 cup, and 3 tablespoons unsweetened cocoa
3/4 cup packed brown sugar
2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup milk
2 tablespoons butter, melted
1/2 teaspoon vanilla
1 3/4 cup boiling water

Mix 1 cup brown sugar, the flour, baking powder, salt and 3 tablespoons of the cocoa. Stir in milk, butter and vanilla. Pour in the bottom of your crock pot. Mix 3/4 cup brown sugar and 1/4 cup cocoa and sprinkle on top of other mixture...DO NOT STIR.
Pour in 1 3/4 cup BOILING water. DO NOT STIR! Cover and cook on high for 2to 3 hours.

Honey Wheat Bread

2 cups ward reconstituted dry milk
2 tablespoons vegtable oil
1/4 cup honey
3/4 teaspoon salt
1 package active dry yeast
3 cups whole wheat flour
3/4 to 1 cup all purpose flour

Combine warm milk, oil, honey, salt, yeast, and 1/2 the flour. Beat well for 2 minutes. Add remaining flour and mix well. Place dough in well greased crock pot, cover and let stand for 5 minutes. Then bake on high for 2 to 3 hours. Remove from crock pot and let stand 5 minutes before cutting...serve warm.
 
Found some more I had saved:

Garlic Chicken

1-1½ pounds chicken pieces
1 cup brown sugar
2/3 cup vinegar
¼ cup lemon-lime soda (7UP, Sprite or Ginger Ale)
2-3 Tablespoons minced garlic
2 Tablespoons soy sauce

Place chicken in crockpot. Combine other ingredients and pour over chicken. Cook on low for 6-8 hours. Serve with rice.

Beef Tips

1 pound beef tips
1 can Cream of Mushroom soup, undiluted
1 can beef consommé
1 packet French onion soup mix
1 cup red wine
salt to taste

Combine all ingredients and slow cook all day. Serve over egg noodles.

Crockpot Chicken Tacos

4 frozen boneless chicken breasts
1 can chicken broth
1 envelope taco seasoning

Spray crockpot with nonstick spray. Put frozen chicken breasts in bottom of crockpot. Pour broth over chicken. Sprinkle taco seasoning over top. Cook on low for 8 hours. Shred chicken with a fork. Use meat for tacos or quesadillas.

Italian Crock Pot Chicken

4 boneless, skinless chicken breasts, (whole or cut into bite-sized pieces)
1 can Cream of Chicken soup
½ stick butter (no substitutes)
1 envelope dry Italian dressing mix
1 (8oz) package cream cheese, softened

Melt butter, pour over chicken in crock pot. Sprinkle with dry Italian dressing mix. Cover, and cook for 4 hours. Blend soup and cream cheese, pour over chicken for last 1/2 hour. Serve over angel hair or your choice of pasta.

Hawaiian Chicken

1 pound or more boneless skinless chicken breast tenders
1 cup soy sauce
1 cup teriyaki sauce
1 cup sugar
1 can pineapple chunks

Place all ingredients in crockpot; cook on high 4-5 hours. Great with white rice and steamed veggies!

Taco Soup

Into your crockpot, pour the following ingredients:
2 pounds browned hamburger meat
2 cans ranch-style beans
2 cans whole kernel corn
2 cans diced stewed tomatoes
1 can rotel
1 package Ranch Style Dressing Mix
1 package Taco Seasoning

Cook on low for 2-3 hours Serve with grated cheese on top and tortilla chips.

Okay.... I know that this was originally posted several months ago,but I hope the original poster is still "listening". In regard to that Hawaiian chicken recipe.... Did you really mean a full measuring cup of Soy Sauce??? That seems like an awful lot of sodium. Doesn't it taste salty?? Otherwise, it sounds delicious and I'm anxious to try it. Thanks!.................P
 
Parisian chicken
boneless skinless chick breast (4)
cream of mush soup and one can water
sour cream

Cook the chicken and cr of mushroom soup together on low 6-8 hours
Stir in sour cream during the last hour
serve over egg noodles, rice, etc
Easy and yummy

My crockpot cooks fast and this would not have to cook as long as above. Depends on your crockpot.
 
Slow Cooker Lasagna

1 pound lean ground beef
1 onion, chopped
1/2 teaspoon garlic powder
1 18 oz can spaghetti sauce
1/2 teaspoon ground oregano
6-8 lasagna noodles, divided
1 12 oz carton cottage cheese, divided
1/2 cup grated Parmesan cheese, divided
1 12 oz package shredded mozzarella cheese, divided

*Brown ground beef and onion in a large skillet. Add garlic powder, spaghetti sauce and oregano. Cook just until thoroughly hot.

*Spoon layer of meat sauce in sprayed, oval slow cooker. Add layer of lasagna noodles (break to fit slow cooker).

*Top with layer of half remaining meat sauce, half cottage cheese, half Parmesan cheese and half mozzarella cheese. Repeat layers and start with more lasagna noodles.

*Cover and cook on LOW for 4-4.5 hours.
Serves 4 to 6.


Crockpot Ham with Cheesy Potatoes
1 Bag (28 oz) of frozen diced potatoes with onions & peppers (thawed)
2 cups shreaded cheddar & monterey jack cheese blend (8 oz)
1 can (10-3/4 oz) condensed cream of celery soup
1 container (8 oz) sour cream
3-pound fully cooked smoked boneless ham

1. Spray 5- to 6- qt slow cooker w/cooking spray. Mix frozen potatos, cheese, soup and sour cream in cooker. Cut ham lengthwise in half, place ham on potato mixture.

2. Cover and cook on low heat setting 5 to 6 hours or until potatoes are tender.

3. Remove ham from cooker; place on cutting board. Gently stir potatoes well before serving. Cut ham into slices, serve w/potatoes.
 
I almost always cook beef and pork roasts in the crockpot. They turn out so moist and flavorful, even without using mushroom soup or any other add-ins.

The other day we browned a pork roast in a frying pan, seasoned it with some salt and pepper, and then put it in the crockpot on low for 8-10 hours. It turned out SO good! We served it with alfredo noodles (Lipton Sides) and broccoli.

Strangely enough, I don't really like the way that chicken breasts come out in the crockpot, though. It seems to make the meat stringy and tough.
 
It's a cold rainy Saturday and I have a roast in the crockpot so I thought I'd bump this thread for more ideas!!
