I’m interested to hear the answer to this. I’ve done it on the last night as recently as this February. But I’m still not clear on the $100 charges that pop up on the account as you spend more. Maybe someone else can clarify!
I do it every trip, the night before we check out. That way I can check my balance and buy only the GCs I need from the Target website and save 5%. Bonus; I'm not carrying around loaded GCs that can get lost or stolen. I usually bring a couple of blank cards and use the Disney Gift Card website to transfer funds onto them, but on my last trip the website wasn't working with the cards I had and I just took the gift card #s down to the concierge.
Edit to clarify; I settle up the night before because sometimes it takes a while for Target to send the card to me. Also, I've had Target call me to confirm the purchase is legit - and that takes time. You don't want to have to be messing around with gift cards and account balances as you are trying to race off to breakfast or one last morning in the parks.
There are several older threads talking about that $100 charge. I believe Disney started that when they were finding people running over their credit limit and it wasn't identified until they went to check-out. The procedures/timeframe used by various banks to reverse those $100 charges also tend to vary.
You can wait until the night before but I will keep our GCs in the safe and then every few days I will grab 1 and go to the lobby before breakfast and payoff our balance and have them printout the charges so I can look over them. I find this easier to keep track of our spending, plus I have came across a couple of issues in the past that I was able to handle before we left. If the GC still has a good amount of $$ on it, I will put it back into the safe. We never take the GCs to the parks with us, because if they get lost anyone can use them and the whole family use their MBs to charge with.

I combine cards on the Disney site and take a couple of cards so that I don't have all my funds on one card. If I have anything left on the cards by the night before check out then I will go to the front desk to apply the balance.

i do too but I think we are in the minority! I have a secure zippered pocket where I keep my gift card and never worry about losing it. I do this a lot because I am usually staying offsite anyway, but even when onsite I don't charge to my room.
