Character Meets and Activites for no parks trip??

We are thinking about spending a few resort days only (no park tickets) before our cruise. I know that several resorts have character meals and hidden Mickey hunts. Is there anywhere to meet characters outside of the parks and character meals at any of the resorts? Any other unique activities that you would recommend without park tickets? I know there was a Disney princess meet at Disney Springs but I'm not sure if its still there or if there is anything similar?

There are character meals at several deluxe resorts: 1900 Park Fare, Cape May Cafe, Ohana, Trattoria al Forno, Chef Mickey's.
 
You can meet Chip and Dale at the Fort Wilderness Campfire Sing Along. Lots of fun activities at FW.
 
Resort character meals:
Contemporary: Chef Mickey with Mickey, Minnie, Donald, Goofy and Pluto at breakfast and dinner (hated our experience there so no plan to go back)
Grand Floridian: 1900 Park Faire with Pooh, Tigger, Alice in Wonderland, Mad Hatter and Mary Poppins for breakfast (good food and fun experience)
1900 Park Faire with Cinderella, Prince Charming, Step-mother and step-sisters for dinner (was told it's really fun but never been)
Polynesian: O'Hana with Mickey, Pluto, Stich and Lilo for breakfast only (never been)
Boardwalk Inn: Tattoria Al Forno with Rapunzel, Ryder, Ariel and Eric for breakfast only (never been)
Beach Club: Cape May Cafe with Minnie, Donald and Goofy in beach attire for breakfast only (loved it there)
Fort Wilderness: Mickey's BBQ for dinner only (looks fun but read mixed reviews)

Activities we like doing when not going at the parks are mini-golf, spending time at Ft Wilderness looking at the horses and the sing-along with Chip and Dale.

Not really. The princess promenade at Grand Floridian may still be happening, hut Disney do very few resort character appearances outside of holidays and hurricanes.
