IF I decide to change my WL reservation and instead change to a resort without free dining, would I have to cancel my reservtions I already made or can I keep them and just pay OOP? Haven't yet made up my mind...

Yes you can keep the reservations. The restaurants don't know you have the dining plan until you tell them that's how you want to pay (with credits). It makes no difference for the reservation.
